Job Description
We’re on the hunt for a passionate Sous Chef to join our crew at Three Blue Ducks Byron Bay - perched on an 80-acre working farm with stunning views of the hinterland and Byron’s iconic lighthouse. It's a pretty special place to work, and we like to think we’ve built a team that’s just as great.
We’re a tight-knit kitchen that values creativity, hard work, and good banter. We’re serious about the food we serve - local, seasonal, and thoughtful - but we don’t take ourselves too seriously. It’s all about teamwork, good energy, and making sure everyone feels part of the family.
What the role looks like:
You’ll be working closely with our Head Chef to run a tight ship across busy à la carte services, functions, and events. You’ll help lead the team, jump on the tools when needed, and play a key part in keeping standards high and the kitchen humming.
What you’ll be doing:
Running sections and backing up the Head Chef during service
Helping develop new dishes and seasonal menus
Leading by example and supporting junior chefs to grow
Managing ordering, stock, kitchen organisation & rostering (basic admin skills is essential)
Staying on top of food safety, cleanliness, and kitchen systems
Keeping the team energy strong - collaboration and communication are key
What we’re looking for:
Experience as a Sous Chef (or strong CDP ready to step up) in a high-volume kitchen
Great cooking skills and a love for fresh, produce-driven food
Confidence in leading a team and keeping a cool head under pressure
Strong communication, solid organisation, and a genuine team spirit
A good sense of humour and a down-to-earth approach
Basic admin skills essential, including Cooking the Books & Deputy (or another rostering software)
Benefits & Perks:
A supportive and well-run kitchen environment
Opportunities to grow and move across our other venues (Byron, Melbourne, Bellingen & Nimbo)
Tips, staff discounts, and partner perks
Ongoing training and development
A team that works hard, backs each other, and has a laugh along the way
If you’re ready to step into a leadership role and be part of a great kitchen, we’d love to hear from you.
