Job Description

We’re on the hunt for a passionate Sous Chef to join our crew at Three Blue Ducks Byron Bay - perched on an 80-acre working farm with stunning views of the hinterland and Byron’s iconic lighthouse. It's a pretty special place to work, and we like to think we’ve built a team that’s just as great.

We’re a tight-knit kitchen that values creativity, hard work, and good banter. We’re serious about the food we serve - local, seasonal, and thoughtful - but we don’t take ourselves too seriously. It’s all about teamwork, good energy, and making sure everyone feels part of the family.

What the role looks like:
You’ll be working closely with our Head Chef to run a tight ship across busy à la carte services, functions, and events. You’ll help lead the team, jump on the tools when needed, and play a key part in keeping standards high and the kitchen humming.

What you’ll be doing:

  • Running sections and backing up the Head Chef during service

  • Helping develop new dishes and seasonal menus

  • Leading by example and supporting junior chefs to grow

  • Managing ordering, stock, kitchen organisation & rostering (basic admin skills is essential)

  • Staying on top of food safety, cleanliness, and kitchen systems

  • Keeping the team energy strong - collaboration and communication are key

What we’re looking for:

  • Experience as a Sous Chef (or strong CDP ready to step up) in a high-volume kitchen

  • Great cooking skills and a love for fresh, produce-driven food

  • Confidence in leading a team and keeping a cool head under pressure

  • Strong communication, solid organisation, and a genuine team spirit

  • A good sense of humour and a down-to-earth approach

  • Basic admin skills essential, including Cooking the Books & Deputy (or another rostering software)
