CATERING CAPTAIN|ALLYN LODGE
Allyn Lodge is a premier wedding and events venue in the heart of the Finger Lakes, just outside the charming village of Skaneateles, New York. The largest freestanding timber structure in the state, it features floor-to-ceiling windows and a deck with stunning views of a private pond and the surrounding landscape.
The Lodge is currently seeking a Catering Captain to join our team. The Catering Captain is responsible for the coordination and execution of all catering and banquet events, ensuring seamless operations, exceptional guest experiences, and adherence to hotel standards. This role leads banquet staff, collaborates across departments, and ensures accurate execution of all event details.
Responsibilities include, but are not limited to:
- Lead and motivate the Banquet Servers with positive, hands-on leadership
- Review, understand, and execute Banquet Event Orders (BEOs) with precision
- Set up and tear down event rooms, including tables, chairs, equipment, and décor, while ensuring rooms are event-ready before and after each function.
- Oversee the coordination and execution of all catering events, ensuring seamless service delivery
- Review menus and special food arrangements with the Banquet Chef prior to each function
- Meet with banquet culinary staff to confirm food quantities and timing
- Develop and maintain positive relationships with clients and vendors
- Respond promptly to guest needs and ensure overall satisfaction
- Assist with training banquet staff on proper setup, service, and breakdown procedures
- Complete administrative duties including payroll/tip reporting, inventory management, and ordering
- Ensure compliance with food safety regulations, licensing requirements, and company policies
- Stay informed on industry trends and market conditions to identify growth opportunities
- Complete assigned special projects accurately and in a timely manner
Qualifications
- Minimum of 2 years’ experience in a high-volume hotel, banquet, or catering environment
- Strong leadership, communication, and organizational skills
- Ability to collaborate effectively with multiple departments
- A/V knowledge is a plus
- Positive, professional attitude with strong guest service focus
- Ability to work a flexible schedule including weekends and holidays
