Job Description
Port Royal Club, located in the heart of the prestigious Port Royal neighborhood in south Naples, Florida, is a private beach club dedicated to luxury, leisure, and exceptional service. Membership is exclusively tied to property ownership within the Port Royal community, making the Club a cornerstone of one of the most distinguished addresses in the country.
Our Club offers an array of world-class amenities, including a 10,000-square-foot fitness center featuring yoga, Pilates, and spin classes, as well as a serene spa for wellness and rejuvenation. The tennis center boasts nine Har-Tru clay courts and a 1,300-square-foot pro shop, catering to both recreational and competitive players.
Following the impact of Hurricane Ian in 2022, the Club has embarked on a $100 million rebuilding to reimagine our facilities. The new 62,000 sq ft clubhouse—set to open in fall 2026—will embrace timeless West Indies architecture and offer an elevated member experience, featuring a coffee shop, three signature restaurants with indoor and outdoor dining overlooking the Gulf of Mexico, four bars, a banquet venue, a lap pool, and access to our pristine private beach.

The Stewarding Manager is responsible for leading all stewarding and sanitation operations throughout the Club's culinary facilities. This position ensures the highest standards of cleanliness, sanitation, organization, equipment maintenance, and ware washing while supporting all food and beverage outlets, banquets, and special events. The Stewarding Manager develops and leads a high-performing stewarding team that operates efficiently, safely, and in accordance with health department regulations and Club standards.
The Stewarding Manager works closely with the Executive Chef, Culinary Leadership Team, Food & Beverage Management, Engineering, and Purchasing to maintain exceptional operational standards while supporting an outstanding member and guest experience.
Requirements:Essential Responsibilities
Leadership & Team Management
- Recruit, hire, train, coach, schedule, and develop the stewarding team.
- Create a culture of accountability, teamwork, professionalism, and continuous improvement.
- Conduct performance evaluations and provide ongoing coaching and feedback.
- Ensure proper staffing levels for daily operations, banquets, holidays, and special events.
- Lead pre-shift meetings and daily department communication.
Sanitation & Food Safety
- Maintain impeccable cleanliness throughout all kitchens, dish rooms, storage areas, loading docks, and waste handling areas.
- Ensure compliance with all local, state, and federal sanitation regulations.
- Maintain HACCP and food safety standards.
- Develop and enforce cleaning schedules and sanitation procedures.
- Conduct routine inspections to ensure compliance with Club standards.
Operations
- Oversee all ware washing operations including china, glassware, flatware, cookware, utensils, and kitchen equipment.
- Maintain organization of all culinary storage areas.
- Coordinate equipment movement and support for banquets and special events.
- Ensure all kitchens remain properly stocked with clean equipment throughout service.
- Oversee trash removal, recycling, grease management, cardboard disposal, and loading dock organization.
Equipment & Inventory
- Maintain inventory of cleaning chemicals, paper products, stewarding supplies, and smallware’s.
- Monitor chemical usage and ensure proper storage and safety procedures.
- Coordinate preventative maintenance of dish machines and stewarding equipment.
- Report equipment issues and work closely with Engineering on repairs.
- Assist with receiving, storage, and organization of culinary equipment.
Financial Responsibilities
- Manage stewarding labor within budgeted guidelines.
- Control operating expenses through proper inventory management and waste reduction.
- Monitor chemical usage and purchasing costs.
- Assist with annual budgeting and capital planning for stewarding equipment.
Qualifications:
- Knowledge of dishwashing machine use and proper cleaning procedures.
- Strong customer service and communication skills.
- Ability to understand various chemicals and their effects.
- Ability to understand proper sanitation practices.
- Must be able to lift up to 30 lbs. and stand for extended periods.
- Must be able to multi-task and work in a high volume, fast- paced environment.
- Three (3) plus years of supervisory related experience in a fine dining or private club setting.
Physical Demands and Work Environment:
- Must be able to reach, bend, stoop, stand, and lift up to 30lbs.
- Must be able to stand for prolonged periods of time.
- Moderate noise level in the work environment.
- Will work indoors and may be exposed to wet and/or hot conditions.
