Job Function: To lead the kitchen team and together deliver unique, fresh and healthy food offer from the Stroud Brewery Kitchen

Hours: 37.5 per week - 2 admin days and 3 service days

About the kitchen: The kitchen at Stroud Brewery is centred around the wood fired oven and the grill. We focus on using local and/or organic ingredients wherever possible. We have an all day menu with brunch, lunch and grill dishes, plus regular specials and pizzas being offered from Thursdays. We also cater for a range of events and have a dedicated following of regulars who ensure the kitchen is very busy!

Main responsibilities: Working well in a high paced environment under pressure, you will also lead the team to make sure that they deliver a high quality but personable service to all areas whilst minimising any waiting times:

  • Ensure food hygiene regulations are met, including daily tasks, temperature records and an open and close checklist

  • Control and direct food preparation and related activities

  • Together with the kitchen team continually develop our menu, using local and organic ingredients wherever possible

  • Cost all food items and maintain required kitchen GP%

  • Identify suppliers and ensure regular supply of stock

  • Oversee/ensure monthly stocktake

  • Be fully responsible for hiring, managing and training kitchen staff

  • Manage staffing rota and ensure optimum cover for all service times

  • Authorise team holidays

  • Approve timesheets

  • Complete regular 1:1 appraisals

  • Ensure great customer service

  • Ensure health and safety in the kitchen

Person Specification:

Essential:

A passionate chef who has experience managing and leading a large team and can demonstrate the following capabilities:

  • Experience in writing menus across a number of different areas

  • Management experience - understanding team needs in a big kitchen

  • Computer competence (e-mail, spreadsheets, word-processing)

  • Entrepreneurial mind - can provide accurate and timely menu costings and share a commercial overview of the kitchen as a whole

  • Ability to manage GP & wastage to an agreed level

  • Being presentable & professional

  • Maintain a safe working environment within all legal guidelines

  • Passion for organic, fresh local ingredients

  • Experienced in maintaining kitchen hygiene, and health and safety

  • A keen eye for detail - suggestions for continuous improvement for service, prep, menus, ordering, managing the team

  • Practical - oversee basic kitchen maintenance

  • Competent when working with kitchen machinery

  • Works well under pressure

  • Ability to manage & work alongside all Stroud Brewery departments

  • Able to work well in a team

  • Flexible

  • Reliable

  • Conscientious

  • Aptitude for learning

  • Proactive

Desirable:

  • An interest in real ales and their production

  • Curious about cooking with beer and brewery by-products

  • An interest in fermentation & baking

  • Knowledge of sourdoughs

  • Operate within a target margin
