Position Title: Wineaux General Manager
Reports To: Vice President of Food and Beverage
Department: Food and Beverage
Shift: Varies
Role: The General Manager will lead our wine program—from expertly curating the wine list to managing service and coordinating events. You'll also train your team to deliver the unique Wineaux experience and foster relationships with vendors. Tasks include research, testing, development, documenting, training, implementing, monitoring, evaluating and making necessary adjustments to innovative new dishes, concepts and/or food programs. Work directly with the VP of Food and Beverage and the property leadership team to plan and execute food and beverage needs. Perform job responsibilities satisfactorily and according to department standards. Adheres to all Company, Safety and Department policies and procedures. Fosters teamwork and provides excellent guest service, anticipates guest needs to exceed guest expectations. Builds brand loyalty by living the JW Marriott Core Values.
Qualifications:
- Education: High School Diploma or GED
- Experience: 5+ years of progressive experience in wine program management within high-end wine bars, restaurants, or retail.
- Skills:
- Highly refined palate and polished communication style, with a proven ability to engage and build relationships with discerning, luxury clientele
- Demonstrated success curating elevated events, bespoke tastings, and immersive wine education experiences that enhance brand prestige and drive premium revenue
- Executive-level leadership presence, with expertise in cultivating high-performing teams, delivering elevated service standards, and managing strategic vendor partnerships aligned with luxury positioning
- Deep commitment to exceptional hospitality, with meticulous attention to detail and the ability to operate seamlessly in sophisticated, high-touch, and dynamic environments
Required Work Cards needed:
- Valid Clark County Health Card
- Valid Las Vegas Alcohol Awareness Card (TAM Card)
- Valid Non-Gaming/Sheriffs Card
- Valid Manager ServSafe Certificate
- Sommelier Certificate (Intermediate or above preferred)
Key Responsibilities: Responsibilities include, but are not limited, to the following:
Wine Program Strategy & Curation
- Design, curate, and continuously evolve a sophisticated wine list spanning approachable selections to rare, collectible bottles
- Align offerings with brand identity, seasonality, and guest preferences
- Introduce exclusive labels and limited allocations to elevate the program
Wine Service Leadership & Execution
- Oversee and lead all wine service operations across all operating hours
- Ensure elevated standards for wine-by-the-glass and bottle service
- Maintain consistency and excellence during peak and high-profile service periods
Experiential Events & Tastings
- Conceptualize and host immersive wine events, tastings, and educational experiences
- Develop themed programming (e.g., regional showcases, varietal deep-dives)
- Drive guest engagement, loyalty, and incremental revenue through curated experiences
Culinary Collaboration & Pairings
- Partner with culinary leadership to create thoughtful wine and food pairings
- Ensure seamless integration between wine offerings and menu development
- Enhance overall dining experience through flavor synergy and storytelling
Team Leadership & Development
- Recruit, train, and mentor staff to deliver refined, luxury-level service
- Elevate team wine knowledge, service standards, and upselling techniques
- Foster a culture of accountability, excellence, and continuous learning
Wine Club & Member Experience
- Collaborate with wine club leadership to deliver high-touch member experiences
- Coordinate curated releases, concierge services, and exclusive events
- Strengthen engagement for Explorer and Aficionado members
Vendor & Partnership Management
- Build and maintain strategic relationships with importers, distributors, and vineyards
- Negotiate favorable pricing, allocations, and exclusive offerings
- Leverage partnerships to enhance brand positioning and guest experiences
Financial & Inventory Oversight
- Manage inventory controls, forecasting, and pricing strategies
- Oversee vendor contracts and cost management initiatives
- Maintain accountability for wine program P&L and profitability
Compliance & Operational Excellence
- Ensure full adherence to liquor licensing, health, and safety regulations
- Uphold operational standards aligned with luxury hospitality expectations
- Maintain accurate documentation and audit readiness
Guest Experience & Brand Culture
- Champion a personalized, engaging, and elevated guest experience
- Anticipate guest needs and deliver intuitive, high-touch service
- Foster a vibrant atmosphere that reflects the Wineaux culture and brand ethos

Work is performed in a (type of location, i.e., office, kitchen, restaurant, casino, etc.) environment and in other locations throughout the property. Must be tolerant to varying conditions of noise level, temperature, illumination and air quality. The noise level in the work environment is usually moderate. When on the casino floor, the noise level increases too loud. Additionally, smoking is permitted in casino areas consistent with Nevada state regulations, which are followed by the employer.
- Demonstrates strong interpersonal and verbal communication skills, effectively engaging with guests, leadership, and team members in a polished and professional manner
- Capable of standing and walking for extended periods (5+ hours) while maintaining consistent service standards; able to lift, carry, push, and maneuver items up to 40 lbs.
- Thrives in a fast-paced, upscale environment, maintaining composure, efficiency, and attention to detail during peak service periods
- Proficient in point-of-sale systems (Micros or similar) and standard office equipment; able to perform basic math and accurately interpret letters, numbers, and symbols
- Exhibits strong hand-eye coordination to ensure safe and efficient handling of service items and equipment
- Adheres to all company policies, procedures, and safety standards, including proper handling of cleaning chemicals (SDS) and following daily operational communications.
