Position Overview
The Kitchen Supervisor assists in overseeing daily kitchen operations, ensuring consistent food production, high-quality standards, and adherence to safety and sanitation guidelines. This role supports the culinary leadership team by supervising line staff, maintaining organization in the kitchen, and contributing to efficient production for restaurants, in-room dining, and banquets. The Kitchen Supervisor plays a vital role in supporting culinary excellence within a full-service hotel environment.
What You'll Do
Culinary Production & Line Supervision
- Supervise and support kitchen staff during food preparation, cooking, and service.
- Ensure all dishes meet hotel quality standards for taste, presentation, and consistency.
- Assist with cooking and prepping food items across multiple stations as needed.
- Support execution of menus for restaurants, banquets, and special events.
Team Leadership & Support
- Provide guidance, direction, and hands-on training to line cooks, prep cooks, and stewards.
- Assist with onboarding and developing new kitchen team members.
- Promote a positive, respectful, and team-focused kitchen culture.
- Communicate daily production goals, station assignments, and service expectations.
Inventory, Storage & Cost Control
- Assist in monitoring inventory levels, maintaining pars, and organizing storage areas.
- Ensure proper rotation of food items (FIFO) to reduce waste and maintain freshness.
- Support cost-control efforts by monitoring portion sizes and minimizing product loss.
- Assist with receiving and verifying deliveries for quality and accuracy.
Safety, Sanitation & Cleanliness
- Uphold strict adherence to all health department regulations and sanitation guidelines.
- Ensure all kitchen areas, equipment, and tools remain clean, sanitized, and well-maintained.
- Oversee proper food handling, storage, labeling, and temperature control.
- Report equipment malfunctions or safety hazards promptly.
Menu Execution & Operational Support
- Support chefs in preparing specials, seasonal dishes, and new menu items.
- Review Banquet Event Orders (BEOs) and assist in preparing food according to event timelines.
- Help coordinate communication between cooks, expeditors, and servers to maintain service flow.
- Assist with quality control through tastings, inspections, and visual checks.
Administrative Duties
- Assist with maintaining production logs, temperature charts, and station checklists.
- Help with scheduling adjustments and labor planning as directed by culinary leadership.
- Support documentation of training, performance notes, and kitchen operations.
- Communicate shift hand-offs and updates clearly to incoming teams.
Additional Responsibilities
- Fill in for sous chefs or lead cooks when necessary.
- Support hotel-wide culinary events, tastings, and promotional functions.
- Perform other duties as assigned to support culinary operations.
- Maintain reliable and consistent attendance as an essential function of the role.
What You'll Bring
Required Education & Experience
- High School Diploma or equivalent required.
Preferred Education & Experience
- Previous culinary experience in a hotel or high-volume kitchen preferred.
- Prior supervisory or lead-line experience preferred.
- Culinary training or certifications preferred.
- Experience supporting banquets or multi-outlet operations preferred.
Required Skills and Abilities
- Strong cooking skills and knowledge of multiple stations.
- Ability to supervise, motivate, and support kitchen staff.
- Strong organizational and multitasking abilities.
- Excellent communication and problem-solving skills.
- Knowledge of food safety standards, sanitation procedures, and HACCP guidelines.
- Ability to lift up to 30 lbs. and stand for extended periods.
- Ability to work under pressure while maintaining quality and consistency.
