Job Description
GENERAL PURPOSE
Prepares and cooks all food items in a safe, efficient manner to provide a quality product to assure guest satisfaction and maximize departmental profitability.
ENVIRONMENT
Prolonged standing and constant movement in hot, noisy, small environment. Work on a Yacht with limited personal space and public areas. Long hours possible with the likelihood of a varying daily schedule. Prolonged strenuous physical activity in indoor and outdoor environment. Working on a boat that will be away from shore for 2-5 hours.
NECESSARY JOB QUALIFICATIONS
Strong knowledge of food preparation, cooking and sanitation procedures. Able to communicate effectively with supervisors and co-workers, physically able to lift and carry loads of up to 50 lbs. properly, reach levels up to seven feet in height, maneuver and work in spaces as narrow as 2 1/2 feet and work productively in a fast-paced environment. Must have knowledge of and be able to use all kitchen & cleaning equipment.
MATERIAL/EQUIPMENT USED
Standard kitchen equipment and appliances including grills, slicer, stoves, ovens, toasters, sharp knives, etc.
ESSENTIAL DUTIES/RESPONSIBILITIES
- Maintains a high level of sanitation and cleanliness in the galley.
- Responsible for proper preparation (i.e., cleans and cuts vegetables, mixes sauces and stocks, prepares garnishes, etc.) and cooking of all food items for all meal periods in accordance with departmental recipes and procedures.
- Organizes and cleans all refrigerators, freezers and storage areas daily.
- Maintain a clean, sanitary, uncluttered work area by continuously cleaning throughout the shift.
- Properly dates and labels all food items.
- Properly always handles and stores food items in accordance with Department of Health, ServSafe and company guidelines.
- Rotates food following the first in-first out (FIFO) inventory method to ensure that all supplies are expended properly.
- Responsible for receiving food items and non-food supplies and storing them in the proper areas in accordance with the FIFO program.
- Cleans all galley work surfaces as regularly scheduled by supervisor including walls, ceilings, hoods, vents, ovens, etc.
- Maintain a positive, supportive work environment via effective, professional communication with co-workers.
- Support and follow all company policies, procedures and programs, including Yacht Hospitality and Safety.
- Exhibits and encourages proper hygiene and sanitary habits.
- Is friendly, courteous and cheerful at all times.
- Helps other crew members and departments to contribute to the best overall operation of the Barge.
- Promotes good business principles by never discussing company business in public areas or with guests.
- All other duties as assigned, requested or deemed necessary by management
EDUCATION/FORMAL TRAINING/EXPERIENCE
High school diploma or equivalent. Culinary degree or one year’s prior experience as a cook in high volume restaurant environment.
UNIFORM
Will wear cook pants (no denim), black, rubber-soled shoes and chef’s hat, hairnet or Yacht StarShip hat. When working in the kitchen, wears a company logoed T-shirt. When working in public areas wears chef jacket and chef hat.
