MML is continuously expanding, managing, and owning hotels, such as the Hotel Saint Vincent in New Orleans, with new projects in Texas, Colorado, and California currently under development. We also provide F&B consultation for the Austin Proper Hotel, overseeing three restaurants, in-room dining, and banquets throughout the property. MML owns and operates all its properties and only takes on projects that align with our vision and values.

Position Overview

Hotel Saint Vincent is seeking an experienced Banquet Chef to lead the culinary execution of all banquet and event operations. This role is responsible for coordinating, supervising, and delivering exceptional culinary experiences for private events while maintaining the highest standards of food quality, service, and operational efficiency.

The Banquet Chef works closely with the Events, Catering, and Culinary leadership teams to ensure seamless planning and execution of all functions.

What You’ll Do
  • Monitor and develop the performance of team members through supervision, scheduling, coaching, evaluations, and recognition.
  • Assist in planning banquet menus, considering seasonality, dietary restrictions, and guest preferences.
  • Review and analyze Banquet Event Orders (BEOs) to plan and coordinate culinary execution in partnership with Catering and Events teams.
  • Manage and participate in daily banquet kitchen operations, including food preparation, quality and presentation, sanitation compliance, team productivity, and cost control.
  • Coordinate and supervise the production and presentation of food for all events, ensuring high standards of guest service and profitability.
  • Inspect and select high-quality ingredients, including produce, meats, seafood, and spices.
  • Develop and maintain a monthly family meal menu that reflects variety, nutrition, and cultural inclusivity.
  • Oversee preparation and service of staff meals twice daily.
  • Attend weekly BEO meetings.
  • Ensure compliance with all health, safety, sanitation, and alcohol awareness regulations at the federal, state, local, and company levels.

What We’re Looking For:

  • Minimum 3 years of management experience in hotel kitchens
  • Strong knowledge of culinary techniques and diverse cuisines
  • Proven leadership ability with experience motivating and developing teams
  • Strong organizational and communication skills
  • Attention to detail and commitment to quality
  • Ability to work evenings, weekends, and holidays as needed
