LIBERTY SENIOR LIVING is currently seeking an experienced:

LEAD COOK – ASSISTED LIVING

JOB SUMMARY:

  • Knowledge of all therapeutic and mechanically altered diets used in the Facility.
  • Follows planned menus, spreadsheets and production/pull sheets.
  • Able to adjust (calculate) recipe yields to meet production needs.
  • Prepares food items for resident and staff meals, as well as special events. Will be required to prepare regular and therapeutic diets and mechanically altered food items.
  • Plans cooking schedule to have food ready to serve on time.
  • Prepares and cooks food according to tested recipes and established guidelines.
  • Prepares desserts, pastries, breads, and salads.
  • Slices meats in portions required.
  • Serves food timely and attractively using proper utensils and service ware.
  • Serves food at appropriate temperature, either hot or cold as required.
  • Records food temperatures on logs.
  • Utilizes leftovers with guidance from Department Director.
  • Prepares and covers trays for residents as assigned.
  • Takes requests for extra servings of food or beverages.
  • Clears and cleans tables in dining rooms when needed.
  • Label and dates food in storage per policy. Discards expired products.
  • Records temperatures of storage areas on logs.
  • Stocks nourishment kitchen as assigned.
  • As assigned, updates tray card information and prints reports.
  • Washes, rinses and sanitizes pots, pans and service ware according to established procedures and assists with other cleaning as needed or assigned.
  • Keeps cooking and food preparation equipment cleaned and sanitized.
  • Maintains a clean department at all times, including but not limited to sweeping, mopping, trash removal, equipment cleaning, etc.
  • Utilizes the most sanitary methods to handle, prepare, and serve food.
  • Assists with other dietary jobs/functions as assigned, including paperwork.
  • In the absence of the Dietary Director, will assume responsibility for the dietary department and will be in charge of staff. If inadequate staff is available, will assume responsibility for finding replacements and will work an assignment is replacement staff cannot be found.
  • In case of fire or fire drill:
    • Shuts off all equipment.
    • Gets fire extinguisher.
    • Closes doors.
    • Report to nurses station for further instructions.
  • Performs other duties as assigned.

JOB REQUIREMENTS:

  • Must be 18 years of age or older.
  • Must have High School Diploma or equivalent.
  • Serv-Safe Certification required.
  • Must purchase and wear required uniform.
  • Must be able to use equipment without jeopardizing the safety of self, others, or equipment.
  • Must be able to use supplies economically.
  • Must attend in-service training, complete computerized training and attend other staff meetings as required.
  • Demonstrates neat appearance and good personal hygiene.
  • Must read, know and follow personnel, department and Facility policies.
