Summary of Responsibilities:
Our distinguished private club is seeking an experienced and innovative Executive Pastry Chef to lead and elevate all aspects of the club's pastry and baking program. This leadership role is responsible for creating exceptional dessert experiences that complement the club's commitment to world-class hospitality, culinary excellence, and personalized member service.
The Executive Pastry Chef will oversee all pastry operations, including a la carte dining, specialty events, weddings, banquet functions, holiday programming, artisan breads, seasonal offerings, and member-focused culinary experiences. The ideal candidate is a creative leader who combines technical expertise with a passion for excellence and a deep understanding of luxury hospitality.

Essential Functions:
- Create and execute diverse menus for fine dining, casual dining, member events, weddings, golf outings, and club celebrations.
- Maintain rigorous production standards across artisan breads, plated desserts, cakes, chocolates, and high-volume banquets.
- Author proprietary bakeshop recipes and production techniques while staying current on regional/national pastry trends, chocolate/sugar work, and seasonal ingredients.
- Supervise daily prep to ensure flawless execution of structural showpieces, specialty doughs, and custom baked items.
- Lead the pastry team by example, providing daily coaching, training, and mentorship to cultivate the next generation of pastry professionals.
- Promote a positive, warm, collaborative, and communicative kitchen atmosphere.
- Hire, train, evaluate, and coach pastry staff members while actively identifying opportunities for their professional growth.
- Offer real-time direction, support, and constructive feedback to staff.
- Prepare preliminary bakeshop budgets, project annual food/labor costs, and implement corrective actions to hit financial goals.
- Review scheduling and labor metrics against forecasted business volume to maximize kitchen efficiency without compromising quality.
- Approve and purchase all pastry department supplies, maintain accurate inventory sheets, and aggressively manage food costs.
- Enforce company policies, uniform guidelines, timecard compliance, and safety/sanitation regulations (HACCP/OSHA).
- Partner closely with the Executive Chef, Chef de Cuisines, and Sous Chefs to maintain seamless kitchen alignment.
- Consult daily with Event Managers and update front-of-house staff on new pastry offerings during pre-shift meetings.
- Attend high-end wedding tastings and personalized consultations to accommodate bespoke member requests.
- Oversee the performance and presentation of dessert stations during live à la carte and banquet services.
- Design and facilitate interactive, member-focused Pastry Cooking classes and culinary experiences for adults and youth.
Required Education & Experience:
- Culinary Arts or Pastry Arts degree highly preferred; equivalent professional leadership experience will be considered.
- Minimum of 5 years of pastry leadership experience within a high-volume luxury resort, private country club, or upscale hotel environment.
- Advanced, proven portfolio verifying mastery in wedding cake design, artisanal chocolate work, and sugar artistry.
- Valid Food Safety Manager certification (e.g., SERV Safe) is preferred.
Working Conditions & Physical Requirements:
- Ability to stand and actively work in a hot kitchen environment for extended periods.
- Ability to safely lift, push, or pull objects weighing 25–50 pounds.
- Ability to safely navigate indoor and outdoor venue environments.
- Flexibility to work non-traditional hours including days, nights, weekends, and holidays based on club programming.
- Excellent fine motor skills and manual dexterity necessary to safely operate specialized kitchen machinery and execute intricate pastry decorations.
