Job Overview
We are seeking a skilled and detail-oriented Meat Cutter/Butcher to join our manufacturing team. This role is responsible for processing high-quality cuts of meat to supply our 23 retail stores. The ideal candidate will have experience in breaking down sub-primal beef, pork, and poultry into various cuts while adhering to strict food safety, sanitation, and refrigeration guidelines. This position requires precision, efficiency, and a strong understanding of meat quality, cuts, and preparation techniques.
Key Responsibilities
- Process sub-primal beef, pork, and poultry according to cut sheets and verbal instructions.
- Maintain strict separation of different meat species to ensure product integrity.
- Develop expertise in meat cuts and maximize yield through proper cutting techniques.
- Safely operate meat processing equipment, including saws, slicers, grinders, and knives.
- Assist in packaging and labeling meat products as needed.
- Maintain accurate production and inventory records.
- Conduct quality inspections to ensure meat meets company standards.
- Plan and manage workflow to optimize production efficiency.
- Adhere to all company safety protocols, including Hazard Analysis & Critical Control Points (HACCP), Standard Operating Procedures (SOPs), Good Manufacturing Practices (GMPs), and Sanitation Standard Operating Procedures (SSOPs).
Qualifications
- High school diploma or GED preferred.
- Prior experience or formal training in meat cutting is strongly preferred.
- Strong knife skills and knowledge of meat cuts and preparation techniques.
- Basic math skills for accurate measurement and portioning.
- Ability to lift up to 50 pounds and stand for extended periods (up to 8 hours).
- Commitment to personal hygiene and workplace cleanliness.
