As part of a team of over 950 dedicated employees, you’ll join a vibrant, guest‑focused community where hospitality, entertainment, and service excellence come together.

We are looking for a Sushi Chef to join our Culinary Department. This role is a key contributor to the precision, artistry, and consistency of our sushi program. The Senior Chef Tournant - Sushi provides expert culinary support across multiple outlets, ensuring flawless execution of menu items, adherence to company standards, and strict compliance with all food safety and hygiene protocols. This position is deployed flexibly to support operations in the absence of a Sous Chef or Executive Sous Chef and plays an essential role in maintaining a safe, energized, and welcoming work environment.

Key Accountabilities

  • Culinary Excellence — Executes sushi preparation, pre‑cooking, cooking, and presentation with precision, consistency, and adherence to standardized recipes.
  • Outlet Support — Provides seamless coverage across outlets, stepping into high‑volume or high‑demand environments to maintain service quality.
  • Hands‑On Production — Prepares and presents sushi items during service, ensuring speed, accuracy, and exceptional product quality.
  • Product & Inventory Support — Submits product requirements to senior culinary leaders and assists with receiving, breakdown, storage, and rotation of sushi ingredients.
  • Mise en Place Mastery — Prepares meticulous mise en place—including fish, garnishes, sauces, rice, and tools—to support efficient, high‑volume sushi production.
  • Team Collaboration — Works closely with Commis, Demi, and Chef de Partie team members, offering guidance, technique support, and operational readiness without formal supervisory responsibility.
  • Equipment Care — Cleans culinary equipment after use and ensures proper handling of soiled equipment.
  • Inventory & Administration — Assists with month‑end inventory counts and participates in monthly culinary meetings.
  • Cross‑Department Communication — Liaises effectively with all operational departments to ensure smooth service execution.
  • Guest & Team Engagement — Cultivates positive working relationships with guests, ownership, and employees, contributing to a professional and welcoming culinary environment.
  • Regulatory Compliance — Ensures compliance with licensing laws, health and safety standards, and all statutory regulations.
  • Other Duties — Performs additional responsibilities as assigned.

Education and Qualifications

  • Must be able to work a flexible schedule, including evenings, weekends and holidays
  • Minimum 6 months of dedicated Sushi experience with strong knife skills and fish-handling techniques
  • Food Safety Certification
  • Ability to successfully clear a criminal record check
  • Ability to exceed internal customer expectations through timely, effective and service oriented communication

Work Environment Considerations

  • Regular casino environment, standing and walking for long periods of time, and non-traditional work hours
