Bakery Assistant Manager
Summary
The Bakery Assistant Manager is responsible for assisting in the day to day operations of the bakery. Successful operation is ensured by establishing, documenting, and enforcing policies and procedures regarding receiving and warehousing ingredients and supplies, food production, sanitation, distribution, and administration. This is a hands on position where the vast majority of activities are conducted from the production floor. The bakery will produce 365 days a year including holidays. This position will be responsible for ensuring all shifts are properly staffed. The Bakery Assistant Manager or Production Manager must be on duty at all times. The Bakery Assistant Manager and Production Manager will work out a shift rotation.

Essential Duties and Responsibilities
Production
- Experience producing and supervising the production of baked goods
- Train personnel on proper production procedures
- Strictly enforce standards for quality
- Understand scaling and mixing of ingredients, formula calculation and adjustments, dough mixing and makeup, makeup, proofing and baking of all products.
- Record actual production and compare quantities of material used and labor to expectations
- Control bakery waste and labor efficiency
- Adjust production plan as needed
- Understand the importance of team effort and efficiency to maintain a low labor cost
- Counsel and support members of the bakery production team
