About This Position
Job Summary:
The Lead Production Associate will receive raw goods, manufacture, and occasionally package the Company's products. Additionally, the Lead Production Associate will be responsible for providing direction and oversight to the Production Associates and Porter during the workday and assisting the Culinary Director with other tasks as assigned.
Duties & Responsibilities:
- Work in a lead capacity during the Company's P.M. Shift -- approximately 2 p.m. until 10 p.m. for now.
- Clearly communicates and gives direction to Production Associates, including but not limited to in the raw and spice rooms, and Porter and acts as a liaison between Culinary Director and Production team when the Culinary Director is not present on the Production floor.
- Assists the Production Team by identifying where help is needed and assisting the team accordingly.
- Assists Culinary Director with executing weekly production according to HACCP standards.
- Assists Culinary Director with forecasting production schedule, curing room flow, and ordering needs, including rotating meat into production from the outside cooler to ensure the team is operating efficiently.
- Assists Culinary Director and QA manager with maintaining proper HACCP documentation and logs.
- Assists Culinary Director and QA Manager with ensuring orders that go out are accurate and meet the Company's standards and applicable customer's specifications.
- Coordinates as needed between the Retail Team and Production Team.
- Provides a high level of customer service through extensive product knowledge of the brand.
- Acts as a role model for the Production Team by exhibiting a good attitude and dedication to safety and cleanliness.
- Spicing, brining, and netting large quantities of meat.
- Meat fabrication, mostly sorting and scaling out meat ratios.
- Clipping, hanging, and smoking fresh sausages.
- Packaging ready-to-eat products and building pallets.
- Tagging and hanging large quantities of salami.
- Maintains a variety of products while conforming to the production standard.
- Operates all meat equipment including meat wrapper.
- Handles damaged and spoiled products according to Company policy.
- Complies with safety policies and procedures; notifies manager of any potential hazard immediately.
- May perform other miscellaneous tasks assigned by managers necessary to provide products and services to customers during peak periods of business.
- Performs other duties as assigned.
Required Skills & Abilities:
- Thorough working knowledge of The Spotted Trotter's processes and ability to clearly communicate and give direction to the Production team during daily workflow.
- Excellent communication and teamwork skills.
- Excellent time management skills.
- Proficient computer skills and willingness to learn the Company's ERP system.
- Ability to understand and meet USDA standards for health and safety.
- Ability to remain alert and focused in an environment that is noisy and fast-paced.
- Ability to disassemble, clean and reassemble all equipment as part of the sanitation process.
- Ability to work effectively with other team members.

Education & Experience:
- High school diploma or equivalent required.
- Previous kitchen experience is preferred but not required.
- Basic food knowledge.
- State motor vehicle operator's permit for operation of forklift highly preferred.
Physical Requirements:
- Must be able to traverse distribution warehouses and access a variety of storage spaces and shelving units by stretching, squatting, and reaching.
- Must be able to lift up to 50 pounds at times.
- Must be able to work in variable cold and hot environments and be comfortable working with meat.
