Job Description
Cornerstone Restaurant Group (CRG), based in Fulton Market, is seeking a talented Pasta Prep Cook to support CRG’s newest restaurant, Dimmi Dimmi, nestled in the Lincoln Park neighborhood. The restaurant features 70 seats inside, with an additional 40 seats outside during patio season.
With Dimmi Dimmi Corner Italian, CRG is reimagining the iconic neighborhood Italian spot with bold red-sauce staples, classic cocktails, and a warm, buzzing vibe. It’s where timeless tradition meets modern energy, brought to life with heartfelt hospitality and moments made to share.
The culinary team is led by Executive Chef Matthew Eckfeld, who honed his expertise in Italian cuisine at New York’s celebrated Carbone and other iconic Major Food Group restaurants. Our pastry program is guided by consultant Casey Doody, a French Pastry School alum and former Director of Pastry at the renowned Boka Group.

Pasta Prep Cook Responsibilities
- Prepare fresh pasta dough according to the chef's recipes, ensuring consistent texture, hydration, and yield.
- Operate, clean, and maintain pasta equipment.
- Label, date, and store all prepared pasta products following proper rotation and food safety protocols.
- Perform many basic tasks of food preparation and organization in the kitchen.
- Effectively communicate with other team members of the kitchen staff.
- Gracefully receive constructive criticism as well as effectively carry out orders.
- Perform quality work within deadlines with or without direct supervision.
- Carry pans, kettles, and trays of food to and from workstations, stoves, and refrigerators.
- In a timely manner, properly store daily deliveries and foods in designated areas following wrapping, dating, and rotation procedures.
- Ensure that a high standard of hygiene and cleanliness is maintained by following cleaning routines and through ongoing diligence during the shift and in set-up and clean-down procedures.
- Clean designated work areas, equipment, and utensils; distribute supplies, utensils, and portable equipment.

- At least 18 years of age
- High school education or equivalent
- 1-2 years of experience
- Basic computer skills
- Ability to deal with guests in a professional manner while maintaining a composed demeanor in high stress situations
- Must be able to frequently go up and down stairs throughout the shift while carrying up to 25 lbs
- Ability to lift and carry objects weighing up to 25 pounds on a regular basis
- Frequent long periods of standing and walking are expected during the workday
- Ability to reach for objects and stoop or bend as needed to perform job duties
- This position may involve visual and auditory tasks, including the ability to see and hear adequately to perform job functions
