Job Description

Overview

The Cooking Machine Operator is responsible for the safe and efficient operation of cooking equipment (including steam cooking vats, deep fryers, pressure cookers, kettles, and boilers) to prepare high-quality food products, of tortillas and tortilla chips. This role ensures product consistency, Good Manufacturing Practices (GMP) and quality and safety standard regulations, and contributes to overall production goals.

Essential Duties and Responsibilities:

  • Cook corn to precise specifications to maintain consistent product quality. Monitor and adjust equipment controls (temperature, pressure, flow) to ensure optimal cooking conditions.

  • Observe product characteristics (e.g., color, texture) and make necessary adjustments.

  • Operate cooking equipment according to established procedures and safety guidelines.

  • Start pumps, turn valves, or use other controls to add ingredients or drain/transfer products.

  • Pour, dump, or load ingredients into cooking equipment, either manually or using provided equipment (e.g., hoists).

  • Remove cooked tortillas or materials from equipment.

  • Adhere to Good Manufacturing Practices (GMPs), including strict hygiene standards (hand washing, wearing protective gear).

  • Follow all food safety policies and procedures to ensure a safe, consumable product.

  • Monitor product quality throughout the cooking process.

  • Rotate corn or flour using the FIFO (First-In, First-Out) method.

  • Clean, wash, and sterilize equipment and the cooking area using appropriate solutions and procedures.

  • Monitor equipment for proper functioning, listen for alarms, and report any malfunctions to supervisors and maintenance personnel.

Documentation and Reporting:

  • Accurately record production data, including processing steps, temperatures, steam readings, cooking times, batch information, and test results.

  • Complete all necessary documentation related to production and quality control.

  • Document and track product waste, ensuring it remains within acceptable levels.

  • Accurately measure or weigh ingredients using scales or measuring containers.

  • Confidentiality: Maintain strict confidentiality regarding company processes, procedures, ingredients, and recipes.

Education, and Experience:

High School Diploma or GED equivalent required. Knowledge of food production processes, quality control, and food storage/handling techniques. Understanding of raw materials, production processes, quality control, costs, and other techniques for maximizing the effective manufacture of food products.

Physical Requirements:

  • Ability to stand for extended periods.

  • Ability to lift and carry up to [Specify weight, e.g., 50 pounds].

  • Ability to work in a hot and humid environment.

  • Manual dexterity and hand-eye coordination.

  • Ability to use water hoses and cleaning equipment.

Other Duties:

  • Perform other duties as assigned by the Production Supervisor.
