Known for naturally leavened hearth breads, viennoiserie, and classic baked goods made with precision and care, Swedish Hill serves both retail guests and wholesale partners while supporting MML events and catering across the portfolio.

Position Overview

Swedish Hill is seeking a Head Baker to lead wholesale production and support MML events and catering. This leadership role is responsible for overseeing all bakery production while maintaining the highest standards of quality, consistency, and craftsmanship.

The ideal candidate has deep experience in naturally leavened and yeasted breads, strong operational awareness, and a passion for leading and developing a high-performing bakery team. This is a hands-on leadership position requiring availability for nights and weekends.

Key Responsibilities

Production Leadership

  • Oversee production of all bakery products, ensuring quality and consistency of naturally leavened hearth breads, yeasted breads, and viennoiserie
  • Lead wholesale production while supporting MML events and catering needs
  • Maintain strict quality control standards across all products
  • Ensure proper production planning to meet volume demands

Wholesale and Order Management

  • Manage and fulfill wholesale orders using the bakery software program
  • Coordinate production schedules to meet wholesale and catering deadlines
  • Maintain clear communication with leadership regarding order volume and production needs

Team Leadership

  • Lead, inspire, and continue to grow the bakery team
  • Foster a positive, accountable, and professional work environment
  • Train and mentor team members in proper technique and production standards
  • Build and manage team schedules aligned with business needs

Operational Management

  • Control operational costs through efficient scheduling, ordering, and waste management
  • Maintain inventory and oversee ingredient ordering
  • Ensure the bakery is clean, organized, and compliant with health and safety standards
  • Ensure all equipment is serviced regularly and maintained in proper working order

Collaboration and Innovation

  • Collaborate with the chef team to develop new and creative products aligned with the MML brand
  • Contribute ideas that enhance Swedish Hill’s offerings while maintaining production feasibility

Qualifications

  • Minimum 5 years of professional bakery experience
  • At least 3 years of managerial or team leadership experience
  • Strong expertise in naturally leavened breads, yeasted doughs, and viennoiserie
  • Experience managing high-volume production and wholesale accounts
  • Proficient in Google Sheets, Google Docs, and Google Drive
  • Strong organizational and operational skills
  • Ability to work nights and weekends consistently
  • Strong leadership presence with a hands-on, team-first mindset
  • Passion for quality, consistency, and hospitality

Preferred Qualifications

  • Experience supporting catering or multi-location hospitality groups
  • Experience improving production systems and workflows
  • Strong understanding of food cost controls and inventory management
