Job Description
The Food & Beverage Support Coordinator provides hands-on operational support throughout the Food & Beverage Department to keep
products, equipment, storage areas, food-preparation support systems, and sanitation-critical equipment clean, organized, stocked,
rotated, and service-ready. The position supports kitchen, restaurant, bar, catering, buffet, special-event, and other Food & Beverage
operations through receiving, stocking, product rotation, pre-portioning, sanitation, storage organization, and product distribution.
The Coordinator works under the direction of the Food & Beverage Manager and Food & Beverage Supervisors and has no supervisory
or management authority over Food & Beverage employees. In the Manager's absence, the Coordinator takes operational direction from
the designated Supervisor. This position supplements, rather than replaces, routine cleaning, sanitation, stocking, organization, and
maintenance responsibilities assigned to Food & Beverage employees and supervisors.
Essential Duties & Responsibilities
Receiving, Stocking & Product Control
• Receive and verify Food & Beverage deliveries, including food, beverages, bar products, supplies, smallwares, and equipment; report
shortages, substitutions, damage, quality concerns, or other discrepancies to department leadership.
• Safely and promptly put away deliveries and maintain organized dry, refrigerated, frozen, bar, supply, and equipment storage areas.
• Stock and replenish operational areas according to established levels and departmental needs.
• Follow FIFO procedures and ensure products are properly rotated, dated, labeled, and stored.
• Identify expired, damaged, slow-moving, excessive, obsolete, or unused products and equipment and report findings to department
leadership.
• Move and distribute products between Food & Beverage operational areas and properties as directed.
Food Preparation & Kitchen Support
• Pre-portion fries, appetizers, and other approved food products according to established portion standards; properly label, date, cover,
and store portioned products.
• Maintain prepared product levels and ensure cooks have readily accessible products and supplies for efficient service.
• Assist with basic preparation and operational support without replacing the primary responsibilities of scheduled cooks.
• Support banquet, catering, buffet, special-event, and high-volume food preparation as directed.
Equipment Cleaning & Sanitation
• Filter, clean, and maintain fryers according to established schedules, manufacturer recommendations, and departmental safety
procedures.
• Clean and sanitize soda fountain nozzles, diffusers, drip trays, ice machines, and related components according to established
schedules and approved food-safety procedures.
• Maintain cleanliness of designated Food & Beverage equipment, shelving, storage containers, carts, and support equipment.
• Immediately report equipment malfunctions, leaks, damage, sanitation concerns, or required repairs. Do not perform mechanical
repairs outside authorized training or assigned responsibilities.
Storage & Organization
• Maintain the organization and cleanliness of the Bone Yard and other designated Food & Beverage storage areas.
• Store food products, supplies, equipment, and smallwares safely and logically; consolidate products when appropriate while
maintaining proper labeling, dating, separation, and food-safety requirements.
• Assist management with storage reorganization to maximize space and efficiency, and keep aisles, shelving, entrances, exits, and
equipment access clear and safe.
Department Operations Support
• Restock kitchen, restaurant, bar, catering, event, and other operational areas and communicate shortages, low-stock conditions,
damaged or excessive product, and anticipated needs to department leadership.
• Assist with setup, breakdown, stocking, and product movement for special events, buffets, catering functions, promotions, and other

• Coordinate support activities with cooks, bartenders, servers, supervisors, and management while maintaining the established chain
of command.
• Complete assigned daily, weekly, and periodic cleaning, stocking, preparation, receiving, and organizational duties; maintain required
departmental logs.
• Perform other Food & Beverage operational support duties as assigned by the Food & Beverage Manager or Supervisor.
Food Safety & Compliance
• Follow all applicable food-safety, sanitation, health, gaming-property, and departmental policies and procedures.
• Maintain proper temperature control, safe food-handling practices, and cross-contamination prevention during preparation, storage,
portioning, and product handling.
• Properly use required personal protective equipment and cleaning chemicals.
• Immediately report suspected contamination, spoilage, pest activity, equipment failure, unsafe conditions, or other food-safety
concerns.
• Maintain required food-handler, safety, or other certifications as required by Blackbird Bend Casino or applicable regulations.
Minimum Qualifications
• High school diploma or equivalent preferred.
• Previous experience in food service, restaurant operations, receiving, stocking, warehousing, kitchen support, or a related field
preferred.
• Basic knowledge of food safety, sanitation, storage, and FIFO practices preferred.
• Ability to follow written and verbal instructions and established departmental procedures.
• Strong organizational skills, attention to detail, dependability, and ability to complete recurring responsibilities without continuous
supervision.
• Ability to work independently while following the established chain of command and communicating effectively with employees,
supervisors, management, vendors, and other departments.
Physical Requirements
• Ability to stand and walk for extended periods and to bend, reach, push, pull, stoop, and perform repetitive physical tasks.
• Ability to safely lift and move Food & Beverage products, cases, supplies, and equipment consistent with company safety
requirements.
• Ability to work in refrigerated, freezer, kitchen, storage, receiving, and other Food & Beverage environments, including around hot
equipment, fryers, cleaning chemicals, wet surfaces, and other typical workplace conditions
