Job Title: Sushi Cook
Reports to: Executive Sushi Chef
FLSA: Non Exempt
Summary: To help The Islander Sushi Chef in the development and production of Sushi in a professional, creative & cost effective way. To organize the Sushi station following the Chef's instruction while observing all food handlers and sanitation standards.Essential Duties and Responsibilities:

- To help the Sushi Chef produce tasty, creative, attractive and well balanced Sushi
- To establish a high level of consistency in the preparation and presentations of all sushi served at ORC
- To expedite all meals, and special request in an organized, timely and efficient manner
- To help produce Sushi daily specials using the best and freshest ingredient money can buy
- To assist Chef if needed during the pre-meal meetings and help conduct staff tasting of daily specials
- To maintain and observe extreme attention to all sanitation procedures and food rotation
- To help revise menus content, recipes seasonally and according to sales and members/ guest feed back
- To follow the associate hand book at all time, follow ORC rules of conduct, policies and uniform standards
- To maintain very high hygiene standards, food handling, hand sanitation and organization while at work
- To have a good rapport with members at the Sushi-Bar and fellow workers at all time.
- To communicate clearly and politely in English with Members or anyone eating at the Sushi-Bar
- To help conduct food inventory and ordering as needed or as told
- To up-keep the maintenance and cleanliness of the Sushi station by cleaning daily all visible surfaces
- To create and maintain a safe working environment at all time
- To attend all required meeting and ORC university development classes as needed
- To be able to take charge in any emergency
- To help produce any report if needed
- Perform other duties as requested
- To work Holidays as needed or any other designated time as requested by supervisor
- To report any unusual or suspicious activities in the work environment
- To report all work related accident, misconduct or possible harassment
- To maintain an open line of communication with Chefs and fellow Associates
- To keep a high level of confidentiality on sensitive subject and matters as requested by management
- To report and leave work on time or as required by supervisor
- To work by example and promote teamwork and organization among all fellow associates
- To clean and maintain all equipment in proper working condition
- Able to work in extreme temperatures like in front of a hot line or inside a freezer
- Thorough knowledge of all food products, recipes making, preparation and presentation used at work
- Ability to orally communicate, write and read English, to comprehend and communicate job functions
- Good knowledge of Sushi menu, and how to develop them, food costing knowledge required
- Ability to work in confined spaces for an extended period of time
- Ability to grasp, lift and/or carry any cooking equipments or any utensils up to 50 lbs (sac of Onions), or otherwise move goods weighing a maximum of 100 lbs
- Ability to stand, walk continuously during work hours or for an extended period of time
- Ability to effectively interact with fellow ORC associates, members and supervisors some of whom can require high levels of patience tact and diplomacy and collect accurate information to resolve conflicts
- To have the ability to distinguish product freshness by sight, taste, feel and smell
Must have a minimum of 3 years hands-on prior experience in a high volume Sushi restaurant, private club, or hotel-resort
Language Skills:
Must be able to comprehend the English language in order to communicate with co-workers and fully understand job assignments.
Certificates, Licenses and Registrations:- Must have a valid Florida Serve Safe Food Certificate or be certifiable
- High school Graduate or Culinary associate degree preferred but not a must
- Ability to obtain any government licenses or certificates as needed

Attendance, Appearance and Conduct:
Regular attendance in conformance with the standards, which may be established by Ocean Reef Club from time to time, is essential to the successful performance of this position. Associates with irregular attendance will be subject to disciplinary action, up to and including termination of employment.
Due to the cyclical nature of the hospitality industry and report deadlines, associate may be required to work varying schedules to meet the business needs of the Club and report deadlines.
Proper grooming is required by all associates and is described in detail in the Associates Handbook. Associates should review this policy and make sure that at all times they present themselves for shifts looking clean, neat and professional.
As a condition of employment, all associates agree to fully comply with Ocean Reef Club rules and regulations for the safe and efficient operation of Club facilities. Associates who violate Club rules and regulations will be subject to disciplinary action, up to and including termination of employment.
