Job Description
Old Scratch Pizza is looking for an experienced restaurant leader to join our team as a Manager in Training (MIT). This is an opportunity to learn the systems, standards, and leadership approach that make Old Scratch Pizza successful while preparing to step into a permanent management role at one of our locations.
The Manager in Training program is designed for candidates who already have restaurant management experience and are ready to take the next step in their leadership career. You'll work alongside our General Managers, Assistant Managers, and Operations Management Team while gaining hands-on experience in every aspect of restaurant operations.
Throughout the program, you'll develop a strong understanding of Old Scratch Pizza's approach to hospitality, people development, food quality, financial performance, and operational excellence. Depending on experience, performance, and business needs, successful completion of the program may lead to placement as an Assistant Manager or General Manager.
Compensation & Benefits:
- Starting salary of $45,000 per year
- Eligible for monthly bonus after placed as Assistant Manager (up to $7,000)
- 4 weeks (180 hours of paid time off per year)

As a Manager in Training, a Typical Day Might Include:
- Learn and participate in all aspects of the restaurant's daily operations
- Work alongside General Managers and Assistant Managers to develop the skills needed to successfully lead a restaurant
- Coach, train, and support team members to deliver exceptional hospitality and consistently execute company standards
- Build positive relationships with employees while contributing to a culture of accountability, teamwork, hospitality, and continuous improvement
- Learn how to lead Shift Leaders and hourly team members through coaching, feedback, and development
- Ensure consistent execution of food quality, cleanliness, safety, and hospitality standards
- Engage with guests, build relationships, and resolve concerns professionally
- Learn to monitor restaurant performance, including sales, labor, food cost, inventory, and guest satisfaction
- Assist with staffing plans and employee schedules based on fluctuating business needs
- Participate in inventory management, ordering, product controls, and vendor relationships
- Ensure compliance with health department regulations, liquor laws, and company policies
- Participate in restaurant inspections and audits to maintain exceptional cleanliness and organization
- Assist with employee performance evaluations, coaching conversations, and corrective actions
- Help identify and develop future restaurant leaders through mentoring and ongoing training
- Proactively identify and respond to staffing, food quality, service, and operational challenges
- Work alongside the team during busy periods, leading by example and providing exceptional hospitality
- Achieve advanced competency in all roles and stations throughout the restaurant
- Attend required meetings, training programs, and education events
- Partner with restaurant and Operations leadership to execute company initiatives and improve restaurant performance
- Develop the operational and leadership skills necessary to transition into a permanent management position within Old Scratch Pizza

Job Requirements:
- Minimum of 2 years of restaurant management experience
- Previous experience hiring, training, coaching, and leading restaurant employees
- Experience with restaurant operations, inspections, or audits
- Must be at least 21 years of age
- Ability to work flexible hours, including evenings, weekends, and some holidays
- Availability to work Thursday through Monday, with Tuesday and Wednesday off
- Excellent leadership, communication, coaching, and customer service skills
- Strong organizational, problem-solving, and decision-making abilities
- Ability to multitask and prioritize in a fast-paced environment
- Basic computer proficiency and experience with restaurant POS systems
- Willingness and ability to train at different Old Scratch Pizza locations as needed
- Ability to successfully complete the Manager in Training program and demonstrate readiness for placement into a permanent management position

Work Environment:
The Manager in Training works in a fast-paced, high-energy restaurant environment and is expected to lead by example while actively participating in daily operations. This position requires frequent interaction with guests, team members, vendors, and leadership while balancing multiple priorities throughout the day.
The work environment includes regular exposure to:
- High temperatures from ovens and kitchen equipment
- Cold temperatures in walk-in coolers and freezers
- Water, cleaning chemicals, and sanitation solutions
- Common food allergens, including dairy, gluten, nuts, citrus, and other ingredients
- Moderate to loud noise levels during busy service periods
Managers in Training should be comfortable working both in the dining room and kitchen while maintaining a visible leadership presence throughout each shift.

The Manager in Training must be able to:
- Stand and walk for extended periods throughout the workday

- Use hands and fingers for repetitive tasks, including food preparation, computer work, and operating restaurant equipment

- Maintain awareness of surroundings to ensure a safe environment for guests and employees
- Work comfortably in walk-in coolers, freezers, and areas with varying temperatures
- Move throughout the restaurant quickly during peak business periods while maintaining a high level of service and leadership
