Pay Depending on Experience ($17-18.50)

Qualifications:

Culinary Degree preferred

  • 2-5 years of food service management experience
  • Must have, and maintain Serve-Safe certification or willing to obtain one.

Job Relations:

Is responsible to and reports directly to Executive Chef or General Manager.

  • Supervises workers - Supervises duties of all food service personnel and Metz Culinary Management Standards and unit specific policies as well
  • Inter-relationship - Must work closely with Executive Chef, General Manager, Catering Manager, as well as with all team members.

Duties & Responsibilities

Maintaining the highest level of food quality, and service in accordance with the values of Metz Culinary Management standards and regulatory compliance. Makes the soups & sauces up to Exec. Chef & GM standards .Tastes everything before served

Based on corporate and client objectives, develops plans to meet these objectives in conjunction with his/her supervisor.

Reviews with the production staff daily, their plans to meet storage, production and service needs. Ensures that production and waste records are complete and accurate and that recipes are followed in production.

Through close monitoring of food service lines in all operations, ensures that food quality and selection consistently meet customer needs and Metz Culinary Management standards.

Directs and reviews team on HACCP regulations, Occupational Safety Standards, and Proper Maintenance procedures.

Is responsible for the orientation of each new employee, appraising performance on a daily basis and making necessary adjustments or corrections. Periodically conducts a formal appraisal.

Assist Executive Chef with the maintenance of all compliant recipes, production sheets, accurate record keeping, taking and evaluating weekly inventory, maintains weekly operation reports, and reporting in accordance with company systems policy and procedures.

Maintains contact with customers so as to be aware of customer acceptance of the food program. Develops working rapport with the staff. Works with Executive Chef to address customer complaints, suggestions or requests immediately.

Assists Executive Chef with daily meetings with members of the supervisory team and the food service employees.

Keeps personal work areas clean, neat and efficiently arranged at all times.

Performs any other tasks as requested by the General Manager.

Must have solid kitchen leadership experience. Experience desired in a Contract Dining Food Service setting such as Hospital, School, College, Senior Living or Corporate Dining accounts. A strong Supervisor with solid Culinary Training, ready for the next step would be ideal.

Requirements:

  • 3-5+Plus Years in a Supervisory Experience or Sous Chef
  • High Volume background
  • Impeccable communication skills
  • Restaurant Management knowledge
  • Thorough knowledge of Menu implementation with STUNNING presentation ideas
  • Catering Experience
  • Culinary Degree strongly preferred
