Under the guidance of the Sous Chef, the Pastry Commis plays a key role in bringing our pastry program to life—executing menu items with precision, consistency, and pride. This role supports the daily production of desserts, pastries, and baked goods while upholding company standards, maintaining impeccable hygiene and safety practices, and contributing to a warm, collaborative kitchen environment. The Pastry Commis leads through action, embraces learning, and helps cultivate a space where every team member feels supported and welcomed.

Key Accountabilities

  • Pastry production — Prepares, pre‑cooks, bakes, and presents pastry menu items with accuracy and timeliness, following standardized recipes and established methods.
  • Mise en place — Organizes and prepares ingredients, garnishes, sauces, doughs, batters, and tools required for high‑volume pastry production.
  • Equipment care — Cleans and maintains pastry equipment and tools according to all health, safety, and sanitation standards.
  • Inventory handling — Receives stock, labels, dates, stores, and rotates ingredients in designated storage areas to ensure freshness and minimize waste.
  • Team communication — Attends culinary meetings and communicates effectively with all operational departments to support smooth service and production flow.
  • Relationship building — Builds positive working relationships with guests, ownership, and team members, contributing to a respectful and collaborative kitchen culture.
  • Regulatory compliance — Ensures adherence to licensing laws, food safety standards, health regulations, and all company policies.
  • Additional duties — Performs other tasks as assigned to support the pastry team and overall culinary operations.

Education and Qualifications

  • Culinary education is an asset, particularly with a focus on baking or pastry.
  • Flexible availability including evenings, weekends, and holidays.
  • Minimum 1 year of culinary experience; pastry‑specific experience preferred.
  • Red Seal certification or current enrollment is an asset.
  • Valid Food Safety Certification.
  • Ability to clear a criminal record check.
  • Strong commitment to service‑oriented communication and exceeding internal and external guest expectations.

  • Regular kitchen environment, standing and walking for long periods of time, and non-traditional work hours
