The Executive Chef leads all Food and Beverage BOH operations throughout Spooky Nook Sports. This team leader will assist in the creation, communication, and reinforcement of the long-term vision of the Banquets and Restaurant operations. Leading and developing a high performing BOH team to manage the day-to-day operations is essential.

Essential Job Functions

  • Exceed overall financial expectations of each outlet by creating, implementing, and ensuring proper procedures in purchasing, food prep, menu development, labor scheduling, cost control, and revenue generation
  • Manage Nook kitchen staff in the preparation, production, and presentation of all food from all food and beverage outlets
  • Create and execute all special event menus for events by working closely with the sales/banquet teams
  • Create all menus seasonally for all food and beverage outlets
  • Develop, implement and monitor schedules for the operation of all food and beverage BOH operations
  • Responsible for ensuring menu development to meet the needs of changing demographics
  • Ensure menu prices are accurate and up-to-date based on food costs
  • Accurately forecast food consumption and requisition for accurate food purchasing system
  • Interview, hire, train, and recommend discipline and/or termination when appropriate
  • Manage all key performance measures for direct reports within the food and beverage department
  • Maintain and record food safety training completions such as ServSafe, RAMP, and TIPS
  • Develop operating tools necessary and incidental to modern management principles, e.g. budgeting, forecasting purchase specifications, recipes, portion specifications, menu abstracts, food production control etc.
  • Continuously evaluate the performance and encourage improvement of the team members in the food and beverage department
  • Plan and administer a training and development program within the department which will provide well-trained team members at all levels
  • All other duties as assigned

Preferred Qualifications

  • 18 years of age or older
  • 10+ years in the food and beverage field, with 5+ years as an Executive Chef
  • 8+ years of management experience of at least 3 direct reports
  • Dependable transportation to and from work
  • Language skills: Fluent knowledge of the English language; including the ability to read and interpret written information and speak and understand verbal communication
  • Ability to fulfill the physical requirements of the position with any reasonable accommodations as necessary
  • Availability to work a flexible schedule that may include evenings, weekends, and/or holidays as needed
  • Authorized to work in the United States
  • Associate’s or Bachelor’s degree in culinary or a related field
  • Familiarity with global operational function of an entertainment venue
  • Strong understanding of inventory par levels
  • Previous experience working in hospitality
  • Previous experience working with BEO’s and contracts
  • Outstanding demonstration in meeting strict deadlines
  • Strong leadership skills; Inspires respect and trust from others; provides vision, inspiration and guidance. Experienced in setting goals and developing individuals.
