Job Description
The Traveling Assistant Manager works alongside General Managers and restaurant leadership teams across Old Scratch Pizza's four Dayton-area locations (Dayton, Centerville, Beavercreek, and Troy) to help oversee daily restaurant operations and lead our teams in delivering exceptional food, hospitality, and operational excellence.
Unlike an Assistant Manager assigned to one restaurant, the Traveling Assistant Manager provides leadership and management support across all four locations based on staffing and business needs. This may include covering management vacations or leaves, supporting staffing transitions, providing additional leadership during busy periods, or assisting a restaurant that needs additional management support.
The Traveling Assistant Manager has the same responsibilities and expectations as a location-based Assistant Manager and is responsible for supporting staffing, training, food quality, cleanliness, financial performance, and guest satisfaction while helping develop future leaders within our restaurants.
This role requires a leader who is adaptable, confident, and able to build relationships quickly while maintaining consistent Old Scratch Pizza standards across different teams and locations.

As a Traveling Assistant Manager, a Typical Day Might Include:
- Assist in overseeing the day-to-day operations of the assigned restaurant.
- Lead and support hourly team members and Shift Leaders to ensure successful execution of each shift.
- Maintain high standards of food quality, cleanliness, safety, and hospitality.
- Ensure all restaurant policies, procedures, and training programs are followed consistently.
- Proactively identify and resolve staffing, service, food quality, and operational issues.
- Coach, mentor, and develop team members through ongoing feedback and training.
- Assist with interviewing, hiring, onboarding, and retaining employees.
- Train and develop Shift Leaders and future managers.
- Build positive relationships with guests and address concerns promptly and professionally.
- Monitor labor, food costs, and operational expenses to support restaurant profitability.
- Assist with inventory management, ordering, and product controls.
- Create and maintain staffing schedules that support business needs.
- Conduct restaurant walk-throughs to ensure cleanliness, organization, and maintenance standards are met.
- Guide completion of employee tasks and hold team members accountable for performance expectations.
- Serve food and beverages to guests with exceptional hospitality when needed.
- Monitor employee and guest activities to ensure liquor regulations and company policies are followed.
- Attend management meetings, training sessions, and educational events.
- Achieve and maintain advanced proficiency in all positions and stations throughout the restaurant.
- Assist with employee performance management, coaching, and corrective action conversations.
- Serve as Acting General Manager when the General Manager is absent.
- Provide Assistant Manager coverage across the Dayton, Centerville, Beavercreek, and Troy locations based on staffing and operational needs.
- Adapt quickly to different restaurant teams and leadership styles while maintaining consistent company standards.
- Build strong working relationships with General Managers, Assistant Managers, Shift Leaders, and team members across all four locations.
- Provide additional management support during vacations, leaves, staffing transitions, peak business periods, and other operational needs.
- Partner with General Managers and Operations Leadership to identify opportunities and support strong restaurant performance across all locations.

Job Requirements
- Minimum of 2 years of restaurant leadership experience.
- Must be at least 21 years of age.
- Ability to work flexible hours, including evenings, weekends, and some holidays.
- Strong leadership, communication, and customer service skills.
- Ability to coach, motivate, and hold team members accountable.
- Strong organizational and time-management skills.
- Ability to multitask and prioritize in a fast-paced environment.
- Ability to adapt quickly to different restaurant environments, teams, and operational needs.
- Basic computer skills and experience with restaurant POS systems.
- Ability to work extended hours during peak business periods.
- Reliable transportation and ability to regularly travel between Old Scratch Pizza's Dayton, Centerville, Beavercreek, and Troy locations.
- Ability to stand, walk, bend, lift, and perform physical restaurant duties throughout the shift.
Work Environment
The Traveling Assistant Manager works in a fast-paced, high-energy restaurant environment and is expected to lead by example while actively participating in daily operations. The assigned work location may vary between Old Scratch Pizza's Dayton, Centerville, Beavercreek, and Troy restaurants based on staffing and operational needs.
The work environment includes regular exposure to:
- High temperatures from ovens and kitchen equipment.
- Cold temperatures in walk-in coolers and freezers.
- Water, cleaning chemicals, and sanitation solutions.
- Common food allergens, including dairy, gluten, nuts, citrus, and other ingredients.
- Moderate to loud noise levels during busy service periods.
Traveling Assistant Managers should be comfortable working in both guest-facing and kitchen environments while maintaining a visible leadership presence throughout each shift.

The Traveling Assistant Manager must be able to:
- Stand and walk for extended periods throughout the workday.
- Bend, stoop, kneel, crouch, reach, and climb as needed during restaurant operations.

- Operate restaurant equipment safely and efficiently.
- Use hands and fingers for repetitive tasks, including food preparation, computer work, and operating restaurant equipment.
- Communicate effectively with guests, employees, vendors, and leadership in a busy restaurant environment.
- Maintain awareness of surroundings to help provide a safe environment for guests and employees.
- Work in walk-in coolers, freezers, kitchens, and other areas with varying temperatures.
- Move throughout the restaurant during peak business periods while maintaining a high level of hospitality and leadership.
