Job Description

Mamahuhu is built around the idea that food brings people, communities, and cultures together. Chinese-American food is a perfect example — a cuisine that began in China, evolved in America, and continues to bring people together in joyful, shared moments. We're here to celebrate that tradition by creating thoughtful new expressions of classic dishes that are fun, nourishing, and absolutely delicious.

As we continue to grow, we're looking for a PM Shift Lead to run our evening service in Noe Valley and help develop the team around them.

About Us

Mamahuhu's founding team includes Brandon Jew of Mister Jiu's in San Francisco's Chinatown and Anmao Sun and Ben Moore of Hunter Gatherer, a farm-to-table restaurant group in Shanghai, China. With experience spanning fine dining to fast casual, China to California, our team is united by a shared love for Chinese-American food and a commitment to sustainability, quality sourcing, and community.

Our mission is simple: to create Happier and Healthier Communities by spreading the joy of Chinese-American fare and tradition.

About the Role

The PM Shift Lead is the person who owns the back of house from mid-shift through close. You set the pace on expo, you keep quality and speed high through the dinner rush, you delegate prep and breaks across your team, and you hand the morning crew a clean, fully stocked, well-organized kitchen. This is a hands-on leadership role — you'll still be on the line covering stations, prepping, and cooking — but you're also the one the team looks to when things get busy.

We're seeking proactive individuals who love working in a fast-paced, demanding environment and want an arena in which to grow as our company continues to expand.

What You'll Do
  • Work expo — calling and coordinating tickets, checking every plate before it leaves the kitchen
  • Own quality control of service: accuracy, speed, presentation, and consistency through the dinner rush
  • Cover any station as needed — wok, fry, cold — and keep the line moving when volume spikes
  • Delegate prep tasks to team members and hold the shift accountable to completion
  • Prepare any out-of-stock items so the line is never down on a menu item
  • Write the prep list for the AM team so the next day starts set up for success
  • Place daily produce orders based on par levels, upcoming volume, and catering needs
  • Lead the team through catering production, ensuring orders go out complete, on time, and to standard
  • Manage breaks for team members in your department in compliance with California meal and rest break requirements
  • Complete the closing checklist and close the restaurant — including line breakdown, station cleaning, and securing the building
  • Manage the trash area, linens, and laundry
  • Drive waste control: monitor prepped inventory levels, rotate product using FIFO, and reduce shrink
  • Maintain cleanliness and organization on every station at all times
  • Comply with SF Health Department practices (changing sanitizer buckets, food safety protocols) and hold the team to the same standard
  • Label, restock, and maintain the line using the FIFO (First-In, First-Out) method
  • Assist team members with side work and washing dishes during slow periods
Qualifications
  • At least 2 years of cooking experience, with some leadership or lead-level experience preferred
  • Comfortable using Kitchen Display Screens (KDS) for managing orders
  • Able to perform tasks with accuracy, speed, and attention to detail
  • Strong communication skills — able to give clear direction to a team in the middle of service
  • Must be organized and self-motivated
  • Must have an up-to-date Food Handler's Card
  • Up-to-date knowledge of recipes for both the regular menu and catering
  • Able to set up and break down stations according to restaurant protocol and checklists
  • Available to work five evening shifts per week, including weekends and holidays

We Are Looking For Someone Who
  • Has a strong work ethic and thrives as part of a close-knit team
  • Leads by example and earns respect on the line, not just from a title
  • Has a sense of urgency, and challenges themselves to accomplish more each day
  • Has extreme attention to detail
  • Is self-aware, receptive to constructive criticism, and actively works to improve
  • Can multitask and prioritize appropriately
  • Can hold teammates to a standard while keeping the kitchen a positive place to work
  • Appreciates food as a way to bring people together
  • Interest in Chinese-American cuisine and culture is a plus

We Are Proud to Offer Great Benefits
  • Health, Dental and Vision Insurance
  • Daily Employee Meals
  • $21–$23 per hour, depending on experience
  • Participation in a tip pool averaging $4–5 per hour
  • CalSavers Retirement Account
  • Paid sick leave
  • And of course, a supportive team and positive environment

The pay range for this role is:
21 - 23 USD per hour(Mamahuhu Noe Valley )
