In Season Job Overview:
The Kitchen Manager / Cook is a key member of the Circle Seafoods Metlakatla Team and is responsible for participating in the provision of quality meals and nutritional services to staff and guests for the summer season April - October. Responsible for keeping a clean, organized working environment and managing staff at all times. Working 60-80 hours per week, 7 days a week.
Key Responsibilities:
Develop the seasons menu. Prepare a weekly grocery and supply list. Manage and order weekly food items. Help order and organize groceries and supplies. Prepare lunch and dinner and breakfast for approximately 100 people per day on a set schedule. Manage all dishes/cleaning of kitchen and dining area. Keep a tidy, clean working environment at all times.
- Ensure that all safe food handling practices are strictly followed
- Plan menus and maintain budgeted meal costs
- Prepare and serve two meals per day
- Clean, dry, and organize all dishes everyday
- Maintain clean and sanitized kitchen
- Wash and dry cleaning rags
- Responsible for communicating with office and food vendors
- Prepares food and supply orders for galley and housekeeping, manage inventory
- Promotes and maintains galley rules to enhance comfort and cleanliness
- Maintain a high level of professionalism and customer service at all times
- Work around allergies of employees.
Quality Control: Obtain a food worker card, paid for by Circle Seafoods. Adhere to safe food handling practices at all times. Keep a clean working environment at all times. Wash and sanitize all dishes after each meal. Daily inventory & management of bad/expired perishables.
Documentation and Reporting: Ability to follow daily and weekly task lists. Responsible for inventory of: food, kitchen supplies, related cleaning supplies. Good communication skills with necessary individuals.
Off Season: November - May
Off season responsibilities will include rehiring and interviewing seasonal kitchen staff, preparing for the upcoming season by evaluating staffing needs to ensure a seamless transition into the busy period. The Kitchen Manager will coordinate maintenance and upgrades of kitchen equipment to ensure optimal efficiency when operations resume. Engaging with current staff through regular updates and team-building activities will help maintain motivation and readiness for the next season. Finally, the Kitchen manager will collaborate with other departments to align production goals with company objectives, ensuring a cohesive approach to achieving Circle Seafoods' success.
Qualifications:
- High school diploma or equivalent
- Experience serving groups of up to 100 people
- Able to work in a physically demanding environment on a remote island in Alaska.
- Strong communication skills.
- Strong time management skills.
- Valid drivers license and ability to travel for extended periods of time.
Work Environment:
This role involves working on your feet for long hours, both indoors and outdoors. Physical activities include lifting ~ 50 lbs, bending, standing, and moving throughout the day.
Compensation: This is a Salaried full time exempt position, exempt from Overtime. This position includes a competitive benefits package. In addition to a base salary, employees are eligible for health and wellness benefits, and opportunities for professional development.
