Credence Fine Dining Cook - Hearth

Drawing inspiration from South Texas ranches, our menu is a tribute to fresh Gulf seafood, premium Texas beef, and beloved Southern classics, all elevated by our signature live-fire cooking. Sidebar, an exclusive speakeasy-style cocktail bar draws inspiration from the early-1900s Texas oil boom and will be discreetly connected to Credence. Job Summary:

Our fine dining hearth cook specializes in preparing dishes over an open flame or wood-fired oven, ensuring precision, consistency, and elevated flavor. They work closely with the culinary team to execute a refined menu with seasonal ingredients, maintaining high standards of presentation and timing. This role demands strong multitasking skills, deep knowledge of fire-based cooking techniques, and a commitment to excellence in a fast-paced, high-end environment.

Essential Duties and Responsibilities:

  • Follow food safety and handling procedures, such as product rotation, dating and labeling all food items
  • Prepare grill/hearth and prep items in a timely matter
  • Cook all food items according to the specified cook times to ensure they are safe for customer consumption
  • Follow proper knife handling procedures
  • Ensure the quality of the food items and notify the manager if a product does not meet Goode Company standards
  • Prepare ingredients for cooking, including portioning, chopping and storing
  • Wash and disinfect kitchen area including tables, tools, knives and equipment to ensure sanitary conditions are met
  • Assist cooks and kitchen staff to prepare food and provide them with needed items
  • Assist with Rotisserie station as needed

Qualifications:

  • Punctual and reliable attendance
  • 2 plus years of experience in the kitchen of a high-volume establishment
  • Must be 18 years of age
  • Effective time management skills
  • Ability to follow instructions and procedures
  • Able to work in with heated equipment
  • Be able to work in a standing and moving position for long periods of time
  • Food Handler Certified
