Describe the experience and attributes of the ideal candidateKitchen Prep AssociatePosition SummaryThe Kitchen Prep Associate is responsible for completing daily food preparation and ensuringthe kitchen is properly stocked, organized, clean, and ready for service.This position supports consistent food quality, portion control, inventory accuracy, food safety,waste reduction, and efficient kitchen operations.Primary Objective: Right product. Right quantity. Right specification. Ready on time. Minimumwaste.Core ResponsibilitiesFood Preparation & Quality● Complete daily prep lists according to established production requirements.● Follow standardized recipes, batch sizes, portion specifications, and preparationprocedures.● Accurately portion proteins and other high-cost ingredients using approved weights andyields.● Prepare vegetables, sauces, proteins, toppings, sides, and other ingredients required forservice.● Check prepared products for freshness, taste, appearance, texture, and consistency.● Properly package, label, date, and store all prepared products.● Stock service stations and backup inventory before opening.Inventory & Receiving● Conduct assigned inventory counts of food, beverages, packaging, chemicals, andkitchen supplies.● Monitor stock levels and communicate shortages before they affect service.● Assist management with determining purchasing requirements.● Receive vendor deliveries and verify quantities against invoices or purchase orders.● Inspect incoming products for quality, damage, freshness, and appropriate temperatures.● Report shortages, substitutions, pricing discrepancies, damaged products, or qualityconcerns.● Maintain organized storage areas and proper FIFO rotation.Yield & Waste Control● Follow established portion and yield standards, particularly for proteins and otherhigh-cost ingredients.● Weigh or count finished portions when required.● Minimize unnecessary trimming, preparation losses, and overproduction.● Preserve usable product according to established procedures.● Record spoilage, damaged products, preparation errors, overproduction, and otherwaste.● Report significant differences between expected and actual production yields.Kitchen Readiness● Ensure required proteins, vegetables, toppings, sauces, sides, and other ingredients areprepared before service.● Stock breads, packaging, condiments, and other service supplies.● Stage appropriate backup product for service.● Verify that prepared products are properly labeled, dated, stored, and rotated.● Ensure prep areas and equipment are clean and sanitized.● Communicate shortages or incomplete preparation to management before servicebegins.Food Safety & Sanitation● Follow established food-handling and sanitation procedures.● Maintain proper separation of raw and ready-to-eat foods.● Follow required cooking, cooling, reheating, holding, and refrigeration procedures.● Monitor and record required cooler, freezer, and food temperatures.● Maintain proper date labeling and FIFO rotation.● Clean and sanitize prep surfaces, utensils, cutting boards, equipment, and work areas.● Immediately report unsafe food, temperature problems, pest activity, or other food-safetyconcerns.Equipment & Organization● Safely operate approved kitchen equipment, including slicers, food processors, mixers,scales, refrigeration, and other prep equipment.● Follow required equipment cleaning and sanitation procedures.● Maintain an organized and clean prep area throughout the shift.● Report damaged or malfunctioning equipment promptly.● Properly store knives, smallwares, containers, chemicals, and kitchen equipment.QualificationsRequired● Commercial kitchen, restaurant prep, catering, commissary, or food-productionexperience preferred.● Working knowledge of basic food preparation, portioning, knife handling, and kitchensanitation.● Ability to follow standardized recipes, portion specifications, prep lists, and writtenprocedures accurately.● Basic understanding of FIFO, date labeling, food storage, cross-contaminationprevention, and temperature control.● Ability to accurately use kitchen scales, measuring equipment, thermometers, and basicprep equipment.● Basic math skills for weighing, portioning, inventory counts, and verifying deliveries.● Ability to maintain an organized and sanitary work area with limited supervision.● Dependable attendance and punctuality.● Ability to communicate shortages, waste, quality issues, equipment problems, andfood-safety concerns promptly.Food Safety● Food-handler certification required within the timeframe established by the restaurantand applicable regulations.● ServSafe Food Handler or equivalent certification preferred.● Must consistently follow food-safety, sanitation, personal-hygiene, and allergen-handlingprocedures.Physical Requirements● Ability to stand for extended periods.● Ability to bend, reach, lift, carry, and safely move kitchen products and supplies.● Ability to lift up to 50
