Job Description

POSITION: FISHMONGER

B&R Fish Shop is opening on Camelback.

Since 2015, Buck & Rider has flown fresh seafood into Phoenix every day from around the world. It was named No. 16 on Yelp's Top 20 Oyster Houses in the US and Canada, one of only three on the list not on the coast. B&R Fish Shop is where that seafood lands first. It's broken down here before it goes out to our restaurants, and the same product fills our retail case for guests to take home. We're part of Hi Noon Hospitality, named Best Restaurant Group by AZ Foothills Magazine in 2026. We hold a high bar, work hard and have fun doing it.

YOU MIGHT BE THE PERSON WE'RE LOOKING FOR IF…

You can tell how fresh a fish is from the eye, the gills and the smell before you pick up a knife. You get a clean fillet on the first pass and know what to do with the collar. When a guest at the counter asks what's good today, you have an answer. You keep a cold room so organized the next shift could find everything blind, and you'd rather do it with a crew that has fun working hard.

THE JOB

• Receive and inspect fresh seafood deliveries straight from Sky Harbor to ensure quality, freshness and proper temperature control

• Break down whole fish and seafood, including scaling, filleting, trimming, deboning, portioning and preparing cuts to company standards, for our restaurants and our retail case

• Track yield and waste on every breakdown to keep cuts efficient and product costs in line

• Pack and label restaurant orders accurately and on time for delivery to our kitchens

• Keep the case full, sharp and looking its best all day, and help guests at the counter choose what's best that day

• Maintain high standards of cleanliness and organization in the fish cutting and storage areas at all times

• Ensure proper labeling, rotation and storage of all seafood products

• Complete accurate inventory counts and help keep product levels right for the shop and our restaurants

• Uphold food safety standards, including proper holding temperatures, sanitation procedures and company safety guidelines

• Collaborate with chefs, kitchen leadership and team members to support daily service needs, and follow direction from management

WHAT WE'RE LOOKING FOR

• Prior experience as a fishmonger, seafood butcher or in a similar role in a high-volume seafood environment

• Strong knowledge of whole fish breakdown, shellfish handling and seafood quality identification

• Ability to follow company standards, keep cuts and portions consistent and work collaboratively in a fast-paced environment

• Flexible availability, including evenings, weekends and scheduled holidays, and a valid Food Handler card or able to obtain one

• Able to stand and walk for extended periods, work in a cold environment, frequently bend, reach and kneel, and lift and carry up to 50 lbs, with reasonable accommodation as needed

WHAT WE OFFER

Team members may be eligible for medical, dental and vision, a 401(k), paid vacation and holidays, parental leave, a free shift meal, dining discounts across all three of our concepts, and a paid one-month sabbatical at ten years.

Plus paid training, competitive pay, flexible schedules, an employee referral program and room to grow, with Buck & Rider opening in Naples in February 2027 and Houston to follow. We're closed Thanksgiving and Christmas.
