YOUR ROLE
As Chef De Partie – Banquets, you will take ownership of your assigned kitchen section and play a key role in the preparation and execution of food for banquets, functions, conferences, celebrations and other events.
You will ensure that food is prepared to the required quality, quantity, presentation and timing standards while maintaining a clean, organized and efficient section.
WHAT YOU'LL BE DOING
Banquet Food Production
- Take ownership of the assigned section and ensure that all preparation is completed accurately and on schedule.
- Prepare and produce food according to approved banquet menus, standard recipes and production requirements.
- Ensure all mise-en-place is freshly prepared, correctly portioned and available before service begins.
- Prepare food in the required quantities based on confirmed event requirements and instructions from the Sous Chef or Executive Chef.
- Maintain consistency in taste, texture, portion size, presentation and overall food quality.
- Ensure dishes are prepared and ready according to the agreed banquet service timeline.
- Ensure food is presented and served at the correct temperature.
- Coordinate with other sections to ensure components of the same service are ready at the appropriate time.
- Support the Kitchen team in managing large-volume production without compromising food standards.
- Set up and organize the assigned section before preparation and service.
- Ensure all ingredients, equipment, utensils and mise-en-place required for service are available and properly arranged.
- Maintain a clean, organized and efficient workstation throughout the shift.
- Ensure your section remains service-ready during busy periods.
- Complete proper handover before leaving your station.
- Maintain effective communication with the Sous Chef and other team members throughout preparation and service.
- Respond promptly to changes in production requirements or event priorities.
- Remain focused and organized during high-pressure service periods.
- Follow standard recipes and established food production procedures at all times.
- Maintain high standards of food quality and presentation.
- Follow all food hygiene and safe food-handling procedures.
- Ensure correct storage and handling of food products.
- Maintain appropriate food temperatures during preparation and service.
- Ensure the assigned section, equipment and utensils are kept clean and hygienic.
- Report any food quality, hygiene, safety or equipment concerns promptly.
- Maintain personal grooming and appearance in accordance with hotel standards.
- Ensure all stocks are stored under appropriate conditions.
- Monitor ingredients and communicate anticipated shortages to the Sous Chef or Executive Chef in good time.
- Use ingredients responsibly and according to production requirements.
- Maintain appropriate portion control.
- Minimize unnecessary food waste through proper preparation, storage and handling.
- Report shortages, spoilage or quality concerns promptly.
- Provide guidance and day-to-day support to Commis Chefs, junior chefs and trainees assigned to the section.
- Demonstrate correct preparation, cooking, presentation and hygiene practices.
- Assist junior team members in understanding recipes, production standards and kitchen procedures.
- Lead by example during preparation and service.
- Promote effective communication and cooperation within the Kitchen.
- Support other sections when operational requirements demand it.
