Job Description
Position Summary
Must be able to work a flexible schedule. Shift starts early morning and continues until the work is done. Monday- Friday, Saturdays may be necessary
The Smokehouse Kitchen worker is responsible for the safe, efficient, and precise operation of industrial smokehouses, cookers, and thermal processing equipment. This role ensures that meats (such as bacon, sausage, ham, and poultry) are cured, cooked, smoked, and chilled in exact compliance with company recipes, quality specs, and USDA/HACCP food safety regulations.
The Smokehouse Kitchen worker is responsible for the safe, efficient, and precise operation of industrial smokehouses, cookers, and thermal processing equipment. This role ensures that meats (such as bacon, sausage, ham, and poultry) are cured, cooked, smoked, and chilled in exact compliance with company recipes, quality specs, and USDA/HACCP food safety regulations.
Key Responsibilities & Duties
- Equipment Operation: Set up, program, and operate large industrial smokehouses, steam cookers, and smoke generators. Monitor cycle parameters including internal product temperature, relative humidity, smoke density, and airflow.
- Product Handling & Preparation: Load and unload meat products onto trucks, racks, trees, or hanging lines efficiently and safely. Apply appropriate netting, hooks, or molds as required by standard operating procedures (SOPs).
- Recipe Execution: Follow strict processing schedules and recipes, adjusting timers, dampers, and temperature controls at precise intervals during the cooking and smoking cycles.
- Quality & Safety Compliance: Inspect raw and finished products for proper color development, texture, and target weight loss (yield). Record critical control point (CCP) data accurately to comply with food safety guidelines.
- Sanitation & Maintenance: Perform thorough cleaning, washing, and sanitizing of the smoke kitchen equipment, chambers, racks, and floors post-cycle. Report any mechanical malfunctions to maintenance staff immediately.Qualifications & Requirements
- Education: High school diploma or GED equivalent preferred. [1]
- Experience: 1–2 years of experience working in a food manufacturing, commercial kitchen, or meat processing environment (smokehouse experience strongly preferred).
- Physical Demands: Ability to stand for long shifts (8–12 hours), bend, twist, and frequently lift/push heavy racks weighing up to 50–60 pounds.
- Working Conditions: Comfort working in variable temperature environments, ranging from refrigerated processing rooms to warm cooking areas. Must wear mandatory Personal Protective Equipment (PPE) including hairnets, frocks, steel-toed boots, and aprons.
- Skills: Basic math and reading skills to interpret recipes and log data; strong attention to detail and mechanical aptitude.
