Job Description

The Cost Controller plays a pivotal role in overseeing the efficient management of costs and inventory within the restaurant. This includes ensuring optimal stock levels, cost efficiency, and profitability. As a Cost Controller, you should possess a sharp eye for detail, strong analytical abilities, and the expertise to implement strategies that enhance operational efficiency and drive cost savings.
Key Role
  • Supervise Daily Receiving and Storekeeping: Oversee receiving and storekeeping activities to ensure proper documentation and storage of goods.
  • Inventory Documentation: Maintain accurate records of inventory movements with proper documentation.
  • Stock Management: Define and monitor minimum and maximum stock levels and implement par stock systems.
  • F&B Reconciliations: Perform daily and monthly F&B reconciliations using the POS system.
  • Physical Inventory Counts: Conduct physical counts of beverage stocks and manage month-end inventory.
  • Vendor and Delivery Monitoring: Work with the Purchasing Department to track pending and partial deliveries.
  • Budget and Cost Assessment: Provide critical analysis of budgets, cost projections, and variances.
  • Vendor and Cost-Cutting Partnerships: Stay updated on new vendors and potential cost-saving opportunities.
  • Profitability Impact: Understand how productivity impacts profitability and recommend improvements.
  • Cost-Saving Measures: Develop and implement cost-cutting initiatives and track results.
  • Investigate Variances: Analyse unprofitable variances and take corrective actions.
  • Budget vs. Actual Variance Calculation: Calculate and report variances between budgeting plans and actual results.
Qualification
  • Proven experience in cost control, inventory management, or a similar role within the restaurant or hospitality industry.
  • Strong understanding of inventory management systems, POS systems, and financial reconciliation processes.
  • Analytical mindset with the ability to interpret financial data and make data-driven decisions.
  • Experience with budgeting, forecasting, and cost analysis in a fast-paced environment.
  • Proficient in Microsoft Excel or other similar software for tracking and analyzing data.
  • Strong communication skills with the ability to work collaboratively across departments.
  • A degree in Business Administration, Hospitality Management, Accounting, or a related field is preferred.
