Job Description
Overview of Position: The Sous Chef assumes supervisory responsibilities in the absence of the Chef. The Sous Chef is responsible for making the kitchen a safe and clean environment, ensuring opening and closing procedures are properly followed by team members, and also performing food preparation duties. They assist the Chef in a variety of duties in order to ensure the smooth operation of the restaurant.

- Oversee adherence to regulatory requirements for food handling, sanitation and safety.
- Operate all kitchen equipment.
- Draft prep lists and complete daily line checks.
- Set up with the proper product quantities to ensure a smooth working line.
- Prepare fresh fruit, vegetables, sandwiches, salads, roast meats, soups, and desserts.
- Oversee recipe adherence.
- Clean fryers, ovens and ranges as needed.
- Assist with inventory and purchasing.
- Ensure proper storage of all food products.
- Receive deliveries, store, and rotate all stock areas.
- Minimize food waste.
- Assist with special events as needed.
Job Qualifications:
- Bachelor’s degree in Culinary Arts, or equivalent work experience.
- Supervisory experience, preferably in Food & Beverage.
- Strong organizational skills.
- Strong verbal and written communication skills.
- Thorough understanding of food safety and health regulations.
- Strong familiarity with commercial kitchen tools, utensils, and equipment.
- Must be able to give and follow directions thoroughly and accurately.
- Must be able to handle a stressful, noisy and crowded work environment.
- Must be comfortable interacting with both staff and guests in a friendly and helpful manner.
Physical Requirements:
- Must be able to lift up to 50lbs unassisted
- Must be able to stand for up to 12 hours
- Ability to stand and walk on uneven terrain, including snow and ice covered surfaces.
- Ability to climb stairs and ladders.
- Ability to push, pull, bend, stoop, kneel, and reach regularly.
Work Schedule and Conditions: We are in the business of providing a premier guest experience. Traditionally our busy periods are during weekends and holiday periods which you will be expected to work. You can also expect to be asked to work extra hours or days on occasion, especially during the holiday periods.
