This role is focused, hands-on, and essential in ensuring our dough is consistently made to spec, properly handled, and ready to support daily operations across all locations.

Position Summary
As a Dough Production Cook, you are responsible for producing all dough to company standards and schedules.
This includes executing both regular and gluten-free dough production, maintaining equipment and cleanliness, and ensuring proper coordination with delivery to support restaurant needs.
Success in this role requires consistency, attention to detail, and strong ownership of your process.
Key Responsibilities
- Prepare and produce dough according to established recipes, standards, and weekly production schedules
- Execute both regular and gluten-free dough production on designated days
- Ensure all dough meets quality, consistency, and fermentation standards
- Break down, clean, and sanitize mixers and all dough-related equipment after use
- Maintain cleanliness and organization of all dough production areas
- Work closely with the delivery driver to ensure proper quantities are ready for daily and weekly distribution
- Communicate production levels, timing, and needs to support restaurant operations
- Follow all food safety and sanitation procedures

Work Environment & Physical Requirements
This position works in a commercial kitchen environment and includes:
- Exposure to high temperatures and cold conditions in walk-ins
- Frequent contact with water, flour, sanitation solutions, and common allergens (gluten, dairy, etc.)
- Extended standing and walking
- Bending, stooping, and lifting up to 50-100 pounds
- Repetitive wrist, hand, and finger motion
- Use of mixers and production equipment requiring manual dexterity
- Ability to communicate clearly and maintain awareness of surroundings for safety
