Position Summary
Delbar is seeking experienced, dependable, and passionate Line Cooks to join our high-volume kitchen team. Our line cooks are responsible for executing dishes with precision, consistency, and urgency while maintaining the highest standards of food quality, cleanliness, and teamwork. Stations range between hot and cold preparation, and all cooks must be comfortable working multiple areas of the kitchen as needed.

Station Overview
Hot stations include sauté, charcoal grill, fryer, and hot appetizer production. Cold stations include salads, cold appetizers, and certain hot appetizers that require cold-side preparation and assembly. Flexibility is essential, as station assignments may change based on business volume and staffing needs.

Core Responsibilities
Execute recipes and plating standards exactly as trained to ensure consistency across all shifts and locations. Prepare and cook menu items efficiently during high-volume service while maintaining attention to detail. Maintain a clean, organized, and fully stocked station at all times. Communicate clearly with chefs and team members to ensure smooth service flow. Assist with daily prep, breakdown, labeling, stocking, and cleaning duties. Follow all company standards outlined in the employee handbook and kitchen training materials.

Food Safety & Sanitation Standards
Strict adherence to food safety protocols is mandatory. All line cooks must practice proper handwashing procedures and wash hands frequently, especially after handling raw proteins, using the restroom, touching face or hair, or changing tasks. Gloves must be worn when handling ready-to-eat foods and changed regularly to prevent cross-contamination.

All food must be properly labeled and dated, rotated using FIFO (First In, First Out), and stored at correct temperatures. Cold foods must be held at 41°F or below, and hot foods must be held at 135°F or above. Cooks are responsible for using calibrated thermometers to verify internal cooking temperatures, particularly for poultry, meats, seafood, and reheated items.

Raw proteins must be stored below ready-to-eat foods at all times. Separate cutting boards, utensils, and prep areas must be used to prevent cross-contamination. Work surfaces must be cleaned and sanitized throughout the shift, not only at closing. Sanitizer buckets must be maintained at proper concentration levels. All spills must be addressed immediately to prevent contamination and safety hazards. Any signs of illness must be reported to management before beginning a shift, as working while ill is strictly prohibited.

Physical & Work Environment Expectations
Delbar operates in an extremely fast-paced, high-energy environment. This position requires standing for extended periods of time, often 8 to 10 hours per shift. The role involves continuous walking, pivoting, and movement throughout the kitchen. Cooks must be able to bend, reach, kneel, and lift up to 50 pounds unassisted. The kitchen environment includes exposure to open flames, hot surfaces, sharp tools, and loud equipment. Stamina, focus, and the ability to work calmly under pressure are essential.

Professional Standards
All line cooks are required to follow Delbar’s uniform guidelines at all times and maintain a clean, professional appearance. Non-slip shoes are mandatory. Punctuality and reliability are critical to the success of the team. Every cook is expected to uphold the standards, culture, and integrity of Delbar’s kitchen.

Qualifications
A minimum of 1 to 2 years of line cook experience is preferred. Experience in a high-volume restaurant setting is strongly preferred. Candidates must demonstrate knowledge of food safety, proper knife handling, and station organization. Availability to work nights, weekends, and holidays is required.

Compensation & Benefits
Pay ranges from $17 to $23 per hour based on experience and station proficiency. After two years of full-time employment, team members may qualify for five days of paid time off.
