Position Overview

The Pizza Cook is responsible for preparing handcrafted pizzas and related menu items while ensuring consistency, quality, and adherence to culinary standards. This role leads pizza station operations, assists with training junior cooks, maintains proper ingredient preparation, and supports overall kitchen workflow in a full-service hotel environment.

What You'll Do

Pizza Preparation & Cooking

  • Prepare, stretch, and hand-toss pizza dough to desired specifications.
  • Assemble pizzas using standardized recipes, portion control, and presentation guidelines.
  • Cook pizzas using deck ovens, wood-fired ovens, or specialty equipment as required.
  • Prepare and cook related menu items including flatbreads, calzones, sauces, and toppings.

Station Leadership & Production Oversight

  • Lead daily pizza station operations, ensuring readiness of ingredients, tools, and mise en place.
  • Train and guide Cook I, Cook II, Prep Cook, and other junior kitchen staff on pizza-making techniques.
  • Coordinate timing and production with line cooks during service periods.
  • Monitor product levels and communicate shortages or needs to the culinary leadership team.

Ingredient Preparation & Quality Control

  • Prepare fresh toppings, sauces, cheeses, and specialty ingredients according to hotel standards.
  • Ensure correct storage, labeling, and rotation of all pizza ingredients (FIFO).
  • Maintain consistency in dough quality, cooking times, and temperature control.
  • Inspect ingredients daily and report any quality issues immediately.

Food Safety & Sanitation

  • Follow all food safety guidelines including temperature control, labeling, and storage.
  • Maintain a clean, sanitized pizza station at all times.
  • Clean and maintain ovens, tools, prep areas, and pizza equipment daily.
  • Comply with health department regulations and hotel sanitation standards.

Team Collaboration & Communication

  • Work closely with cooks, servers, and culinary leadership to ensure efficient food service.
  • Communicate menu changes, special items, and station needs clearly.
  • Support banquet production, outlets, or special pizza-themed events as required.
  • Assist with kitchen opening, closing, and prep procedures.

Equipment Use & Care

  • Operate pizza ovens, dough mixers, rollers, peels, cutters, and kitchen equipment safely.
  • Clean and maintain pizza equipment and report issues promptly.
  • Ensure all tools and equipment are used according to hotel safety standards.

Additional Responsibilities

  • Assist with inventory, portion control, and cost-control initiatives.
  • Support other culinary stations as needed during peak operations.
  • Perform other duties as assigned to support culinary and hotel operations.
  • Maintain reliable and consistent attendance as an essential function of the role.

What You'll Bring

Required Education & Experience

  • High School Diploma or equivalent required.

Preferred Education & Experience

  • Previous experience working as a pizza cook, line cook, or culinary team member preferred.
  • Experience with pizza dough preparation, oven operation, and specialty pizza techniques preferred.
  • Full-service hotel, banquet, or high-volume restaurant experience preferred.
  • Culinary coursework or formal training preferred.

Required Skills and Abilities

  • Strong pizza-making skills including dough handling, topping assembly, and oven management.
  • Ability to maintain consistency, speed, and quality during high-volume service.
  • Strong knife skills and understanding of kitchen fundamentals.
  • Ability to follow recipes and execute standardized presentations.
  • Good communication, teamwork, and multi-tasking abilities.
  • Ability to stand for long periods and lift moderate weights.
  • Strong focus on sanitation, food safety, and clean workstation practices.
