About This Position
Pay Range: $20.00 – $22.00 per hour (based on experience and qualifications)
Position Summary
The Cook / Grill Master is responsible for preparing, grilling, cutting, and maintaining quality standards for chicken and other menu items. This position plays a key role in food safety, product consistency, speed of service, and kitchen organization.
This is a hands-on production role requiring attention to detail, urgency, and adherence to company standards.
Reporting Structure
Reports to the Assistant Manager and General Manager.
Essential Duties and Responsibilities
- Prepares, marinates, seasons, and cooks whole chicken and other proteins according to company standards
- Cuts and portions cooked chicken for proper presentation and packaging
- Monitors product quality, holding times, and serving temperatures
- Maintains proper production levels based on business volume
- Rotates and stores products using FIFO procedures
- Inspects raw proteins and ingredients for quality standards
- Assists with cold prep including portioning and packaging items as needed
- Supports expediting and order flow during peak hours
- Maintains cleanliness and sanitation of grills, prep areas, equipment, walk-in coolers, and storage areas
- Assists with receiving and properly storing deliveries
- Follows all food safety and sanitation procedures
- Assists in training new team members when assigned
- Performs additional duties as directed by management
- Must be at least 18 years old to cut chicken
- Ability to follow recipes and standardized preparation procedures
- Basic math skills and understanding of units of measurement
- Ability to maintain organization and consistency in a fast-paced kitchen
- Must obtain a California Food Handler Card within 30 days of hire (training and certification provided and paid for by the Company in accordance with state law)
- Frequent standing for extended periods
- Reaching, bending, lifting, and repetitive motions
- Ability to lift and move up to 75 pounds with assistance
- Ability to lift and carry up to 40 pounds independently
- Exposure to heat, grills, steam, smoke, and cold storage environments
- Ability to work during peak business hours
