About This Position

Brief description: As the Bakery Assistant Manager, you will lead your team in the creation of quality food that will add to our guests extraordinary experience within our stores. You will be responsible to learn all aspects of the Bakery Manager position and share in all duties, as directed by the Bakery Manager.

Responsibilities:
Team Management:
-Hiring of qualified candidates.
-Employee check-ins with reporting to Bakery Director.
-Maintain employee tracking of training/experience levels, pay, schedule needs, certifications, disciplinary actions, etc.
-Follow and implement the established training program.
-Maintain a staff schedule at least 2 weeks in advance, and within the established labor budget. Anticipate sales spikes and dips to add or remove labor as needed.
-Manage timesheets accordingly, and deliver the appropriate time periods to the Payroll Administrator.
-Develop your team. Create regular events, perks, etc. to show appreciation for your staff.

Bakery Operations:
Cleaning/Sanitation
-Maintain the established cleaning schedules and procedures for all areas of the facility.
-Train staff on sanitation procedures
-Work within local Health Department guidelines to establish best-practices.

Ordering/Inventory Management
-Order all necessary supplies and ingredients for daily operations.
-Maintain vendor relationships.
-Work with the Bakery Director to meet food cost requirements.
-Maintain multiple purchasing routes to eliminate/reduce outages on products.

Equipment & Maintenance
-Maintain the established maintenance schedule for all bakery equipment.
-Communicate upcoming equipment needs with the Bakery Director.
-Train staff on all aspects of Bakery equipment use, cleaning, and minor maintenance.

Quality Management
-Implement recipes for new bakery products.
-Train staff on new procedures.
-Maintain the established Quality Control Process for all bakery products.
-Ensure all ingredients meet our quality standards.

Order fulfillment
-Receive, plan, produce and package all bakery orders for each day.
-Communicate any order deviations clearly with store management.

Production
-Create and maintain an efficient work flow for daily production.
-Cross train staff whenever possible to ensure uninterrupted production.
-Maintain appropriate par levels to minimize production outages.
-Regularly analyze production flow to maximize efficiency and quality.

Packaging for Distribution
-Maintain procedures and products in order to package all bakery goods in accordance with their holding requirements.
-Train staff on packing procedures to minimize waste and assure quality of delivered products.

Safety
-Maintain safety guidelines for all bakery stations.
-Follow and implement safety training programs for all equipment.
-Follow and implement safety training programs for minors.

Required Permits: Food Handlers permit obtained through the local health department.

Essential job functions:
-Repeated heavy lifting. Must be able to lift 50lb above head.
-Constantly standing, walking, stooping, bending, squatting.
-Constantly using hands, wrists and arms, sometimes in a repetitive manner.
-Pushing and pulling, picking up, and lifting products.
-Regular in person attendance.

Schedule: Must work a minimum one weekend shift every month. As a Manager you are encouraged to work through midday (7-3, 8-4 etc). Working during peak times is critical in running a successful Bakery. Consider which days are busiest and work those. Working midday, as well as the occasional close and weekend shift, allows you the opportunity to see more people on your team throughout the day and stay closely connected to what is happening.

Compensation: $24-25.50 / hour based on experience.
