The Role:
The Captain is a senior front-of-house professional responsible for leading service on the floor, driving exceptional guest experience, and maximizing revenue through refined hospitality and strategic upselling. This role requires strong knowledge of wine, champagne, and premium spirits, as well as the ability to mentor and elevate the service team.

Key Responsibilities
- Lead and oversee service within assigned sections, ensuring flawless execution and luxury-level guest experience
- Serve as the primary point of contact for VIP guests and repeat clientele
- Demonstrate strong knowledge of wine, champagne, spirits, and food pairings
- Confidently recommend and upsell premium bottles, large formats, tasting menus, and high-margin items
- Guide guests through the wine and champagne list with tailored, personalized recommendations
- Drive average check growth through subtle, professional upselling techniques
- Support servers with table touches, bottle presentations, and service recovery
- Train and coach team members on wine knowledge, champagne service, and upselling techniques
- Ensure smooth service flow and clear communication between FOH and BOH
- Monitor table pacing, guest satisfaction, and service standards throughout the shift
- Handle guest concerns professionally and discreetly
- Uphold all service standards, SOPs, and brand expectations
Qualifications & Experience
- Minimum 2–3 years experience in a captain, lead server, or senior FOH role in an upscale or high-volume venue
- Strong wine and champagne knowledge; sommelier training or certification is a plus
- Proven ability to upsell and consistently increase average check
- Experience working with VIP and high-spend clientele
- Polished, confident communication style
- Strong leadership and team-influencing skills
- Ability to perform under pressure in fast-paced environments
- Availability to work nights, weekends, and holidays
