Cook - Full-Time
Under the supervision of the Food Services Supervisor/or Registered Dietician, the Cook assists in preparation of foods for Carolina SeniorCare and Elderhaus participants and personnel, participates in supervision and instruction of Food Services Assistants, and maintains high standards of sanitation and food handling in their work area.Essential Duties and Responsibilities:
- Prepares foods for specified meals.
- Prepares meals as directed by Food Services Supervisor or Dietitian.
- Preparation of meats, vegetables, pastries, desserts, etc., using standardized recipes.
- Assists in serving food adhering to standardized portions and diets. Ensures proper monitoring of food quality, temperature, and accuracy. Corrects deficiencies.
- Assists in the care and maintenance of dietary equipment.
- Keeps working areas and equipment in a clean and sanitary condition. Maintains prep and service areas in a clean, organized, and sanitary manner. Use safe and sanitary methods for all functions.
- Prepare and assemble food prepared for regular and modified diets as directed.
- Knows and follows safety, fire, and sanitation standards.
- Performs perception and color discrimination required to detect differences in appearance of food, indicating completion of cooking time, deterioration, or contamination. Observes and tests foods being cooked by tasting, smelling, and piercing to determine quality and doneness.
- Follows proper controls and documentation to comply with all regulations and surveys.
- Ensures the proper storage and rotation of all products, and assists with physical inventory as needed.
- Knowledgeable of correct cooking procedures for all foods for service.
- Prepares and assists in preparation of catering and special functions menus.
- Responsible for the care and maintenance of kitchen, employee break room, and dayroom food service equipment and supplies. Reports repairs, supply shortages, and breakdowns to supervisor.
- Follows established policies and procedures, standards, and practices in food preparation to achieve department objective of high quality, nutritional meals.
- Practices Universal precautions and follows appropriate Infection Control procedures.
- Maintains a safe working environment. Follows EveryAge PACE Policies and Procedures and OSHA safety guidelines.
- Protects privacy and maintains confidentiality of all company procedures, results, and information about employees, participants, clients, or families.
- Participates in continuing education classes and any required staff and training meetings.
- Assist in the purchase of food and supplies
- Performs related duties as required.
- Keeps dayroom stocked with small wares and dietary supplies.
Minimum Education:
High school diploma or equivalent required
Cardio Pulmonary Resuscitation (CPR) certification required
Minimal Experience:
Six months food preparation experience in a hospital, restaurant, or institutional setting is preferred.
Experience in long term care or health care is preferred.
Minimum one year working with the frail or elderly.
