Job Description

SUMMARY
The R&D Sandwich Senior Specialist is responsible for developing new sandwich and savory products, overseeing quality control, leading new product training and implementation.
JOB DUTIES
include but are not limited to the following:
- New Product development (Sandwich)
- Research Sandwich product trends and market releases
- Discover new ingredients and develop innovative sandwich concepts (hot/cold Sandwiches, wrap, subs, etc.)
- Costing and recipe optimization for sandwich products
- Collaborate with the Bread team to develop savory menu items
- Ability to develop products that are scalable and suitable for factory(industrial) production, with consideration for production efficiency, consistency, and quality control
- Develop, refine, and finalize products for production and market launch
- Manage current Products
- Test existing product to improve quality (testing new ingredients / Revising documentation where needed)
- Conduct testing and evaluate suitability when ingredient changes are made to existing sandwich products, ensuring product quality, consistency, and operational feasibility are maintained
- Training New Products
- Implement new products at Production Facility (Factory, Store)
- Use Q&A analysis to train QC for new products (sandwich and savory category)
- Quality Control
- Production Quality control and food safety management (sandwich and savory category)
- Franchise store quality control and operational standard management for sandwich and savory products
- Documentation
- Create production documentation (Factory manual, Store manuals and process documentation) and ensure ongoing updates
- Maintain Test Logs for product development (ingredients trials, shelf-life, etc.)
- Create Store Production Manual (Breads) / Ensure documentation remains up to date (Breads)
- Basic Nutritional Data analysis (BOMs/ Food Percentage Analysis)
QUALIFICATIONS
- Education & Experience
- Bachelor’s degree in Food Science, Culinary Arts, Nutrition, or a related field (or equivalent practical experience)
- 5+ years of experience in food R&D, preferably in sandwich, savory, or bakery categories
- Experience working in a food manufacturing or industrial production environment
- Proven track record of successful product development and commercialization
- Technical Skills
- Strong knowledge of sandwich and savory product development (hot/cold sandwiches, wraps, subs, etc.)
- Experience with recipe formulation, costing, and ingredient functionality
- Understanding of large-scale (factory) production processes, including scalability and efficiency
- Knowledge of food safety standards and quality control systems (e.g., HACCP, GMP)
- Ability to conduct shelf-life testing and product evaluations
- Familiarity with nutritional analysis and BOM (Bill of Materials) management
- Operational & Leadership Skills
- Experience implementing new products in both manufacturing facilities and retail/store environments
- Ability to train cross-functional teams (QC, production, store staff)
- Strong project management skills with the ability to manage multiple initiatives simultaneously
- Detail-oriented with strong documentation and reporting skills
- Collaboration & Communication
- Ability to collaborate cross-functionally (e.g., bread team, production, QA/QC)
- Strong written and verbal communication skills
- Ability to present product concepts, testing results, and training materials clearly
- Other Requirements
- Proficiency in Microsoft Office (Excel, Word, PowerPoint)
- Bilingual (English/Korean or English/Spanish) is a plus
- Ability to travel between production facilities and store locations as needed
