About This Position
The Great Lakes Loons are seeking a full-time Sous Chef to support all culinary and food service operations at Dow Diamond. This role assists the Executive Chef with kitchen leadership, food preparation, menu execution, staff training, inventory rotation, sanitation compliance, concessions operations, suite catering, event catering, and overall BOH efficiency.Key ResponsibilitiesPrepare, cook, and present menu items for concessions, suites, hospitality catering, and special events.Lead and train kitchen staff; provide hands-on support during food prep and service.Ensure all food meets quality, consistency, and presentation standards.Maintain sanitation and food safety procedures required by the Midland County Health Department.Monitor and record temperature logs, waste logs, and equipment logs.Assist with inventory receiving, stock rotation, and commissary production.Keep all kitchen equipment clean and operational; report issues immediately.Support day-to-day kitchen operations and event execution in a fast-paced environment.Follow company policies, safety procedures, and timekeeping standards.Communicate effectively with the Executive Chef, F&B leadership, vendors, and team members.QualificationsMinimum 5 years of culinary experience required.Strong knowledge of cooking techniques, food safety, and kitchen operations.Ability to train and mentor staff in both fundamental and advanced cooking skills.Excellent communication and teamwork skills.Highly organized with strong attention to detail.Reliable, self-motivated, and able to adapt to changing needs.Must be able to work nights, weekends, and holidays as required.Preferred SkillsExperience in large-volume cooking or event-based food operations (stadiums, arenas, catering, hotels, etc.).Strong understanding of recipe conversions and production efficiencies.Leadership experience in a BOH or culinary supervisory role.Ability to multitask in a high-energy, fast-paced environment.Work EnvironmentFast-paced stadium kitchen environmentIndoor and outdoor event settingsRequires standing for extended periods and lifting up to 40 lbsWhy Work With the LoonsBe part of a fun, dynamic, and professional culinary teamContribute to the fan experience at one of the premier ballparks in the MidwestOpportunities for leadership growth and skill developmentSupportive team culture and hands-on kitchen environment
