The Monarch San Antonio – A Legacy of Service and Sophistication
The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. The hotel will feature a full-service spa, a terrace pool, and five food and beverage concepts, including a rooftop restaurant and bar.

Position Overview

The Cook II is responsible for preparing and cooking high-quality dishes with consistency, skill, and efficiency in support of all hotel dining outlets, banquets, events, and in-room dining operations. This role works with a solid foundation in culinary techniques, manages an assigned station with limited supervision, and upholds the standards expected in a luxury hotel environment. The Cook II also contributes to kitchen efficiency, food quality, and the development of junior team members.

What You’ll Do

Culinary Execution & Food Quality

  • Prepare, cook, and present menu items according to standardized recipes, plating guidelines, and chef direction
  • Maintain consistency in taste, quality, portioning, and presentation across all dishes
  • Execute production for restaurant outlets, banquets, special events, and room service
  • Assist with advanced prep including sauces, stocks, butchery, vegetable preparation, and mise en place

Station Management & Kitchen Operations

  • Manage an assigned station with organization, efficiency, and minimal supervision
  • Monitor inventory levels and communicate product needs to culinary leadership
  • Support smooth service flow through clear communication and teamwork across kitchen areas
  • Participate in daily lineups, production planning, and kitchen meetings

Food Safety & Compliance

  • Follow all HACCP, food safety, and sanitation standards
  • Ensure proper food handling, labeling, storage, and rotation using FIFO practices
  • Maintain a clean, organized, and safe workstation at all times
  • Use kitchen equipment safely and report maintenance concerns promptly

Team Support & Development

  • Assist in guiding and supporting entry-level cooks and kitchen team members
  • Contribute to a collaborative, respectful, and high-performing kitchen culture

Additional Responsibilities

  • Perform other duties as assigned to support hotel operations
  • Maintain reliable and consistent attendance as an essential function of the role

What You’ll Bring

Education & Experience

  • High School Diploma or equivalent required
  • Culinary diploma or formal culinary training preferred
  • Minimum of 2 years of professional kitchen experience preferred
  • Experience in a luxury hotel, fine dining, or high-volume environment preferred

Skills and Abilities

  • Strong knowledge of cooking methods, knife skills, and food preparation techniques
  • Ability to work independently while managing timing and attention to detail
  • Solid understanding of recipes, portion control, and plating standards
  • Knowledge of food safety, sanitation, and proper storage practices
  • Strong organization and time management in a fast-paced environment
  • Clear communication skills and ability to work well with culinary and service teams
  • Ability to assist in training and supporting less experienced team members
  • Physical ability to stand for extended periods and work in a hot kitchen environment
  • Ability to lift up to 50 lbs. and perform repetitive tasks
  • Flexibility to work early mornings, evenings, weekends, holidays, and special events
  • Professional appearance and adherence to grooming standards
  • Strong commitment to quality, consistency, and operational excellence

Licenses or Certifications

  • Food Safe Serve or Texas Food Handler Certification required
