About the Role
Marnong Estate are seeking an experienced and motivated Restaurant Manager to oversee the day-to-day operations of our signature Restaurant – La Vetta. This role is responsible for ensuring the highest standards of guest satisfaction, smooth running of facilities, and effective management and training of staff.
The ideal candidate will be hands-on, highly organised, and committed to delivering outstanding hospitality experiences and have a strong ability to upsell.
Be the face of La Vetta, welcoming, approachable and always anticipating our guests needs
Oversee daily operations of an elevated dining experience restaurant
Manage hospitality services including food & beverage and guest experiences
Lead, train, and motivate staff to deliver excellent service standards
Monitor budgets, costs, and inventory, ensuring financial targets are met
Implement and maintain health, safety, and compliance standards across all departments
Develop and improve policies, procedures, and guest service strategies
Handle guest feedback, complaints, and escalations professionally
Collaborate with senior management to report on performance, staffing, and business opportunities
What we are looking for
Strong leadership skills with proven ability to motivate and manage diverse teams
Strong Wine knowledge – WSET 3 or above highly regarded
Proficiency is suggestive selling
Exceptional communication and interpersonal abilities with a guest-centric mindset
Highly experienced in roster management
Financial management, including budgeting, forecasting, and reporting experience
Highly organised with strong problem-solving skills and attention to detail
Calm under pressure with the ability to manage multiple priorities simultaneously
Thrives in a dynamic, fast-paced environment
Experience with POS systems, booking platforms and hospitality software
Qualifications & Experience
WSET 3 or above highly regarded
Degree or diploma in Hospitality Management, Business, or a related discipline (highly regarded)
RSA certification (required)
Successful track record of Minimum 5 years’ as a restaurant manager
Proven track record of staff training
Proven track record of delivering exceptional guest experiences and strong operational results
Proficiency with property management systems (PMS), booking platforms, and hospitality technology
