About the Position
Pilgrim's Market is seeking a highly skilled and entrepreneurial Sushi Chef to develop and lead our sushi program from the ground up. This role is responsible not only for executing high-quality sushi offerings, but also for building, integrating, and sustaining a sushi production program within our existing kitchen and prepared foods operation.
The Sushi Chef will collaborate closely with the Kitchen Manager and Deli Director to integrate sushi production into current kitchen workflows, food safety systems, ordering processes, and financial targets. This position requires strong culinary expertise, operational awareness, and financial competency to ensure quality, consistency, and profitability.

Key Responsibilities
Program Development & Integration
- Build and implement a sushi program from scratch, including menu development and production systems.
- Develop standardized recipes, portion controls, and prep procedures to ensure consistency and efficiency.
- Integrate sushi production into the existing kitchen workflow and daily production plan.
- Collaborate with the Kitchen Manager and Deli Director to align the sushi program with overall department goals.
Food Preparation & Quality Control
- Expertly cut, slice, and fillet various types of fish with precision and minimal waste.
- Prepare traditional sushi rice in accordance with established techniques and standards.
- Prepare a variety of sushi products (rolls, nigiri, sashimi, and grab-and-go items) following established guidelines for quality, portion size, presentation, and food safety.
- Inspect fish, produce, and dry goods for freshness and quality; communicate any substandard product concerns immediately.
- Ensure all ingredients and finished products meet Pilgrim's Market standards.
- Maintain a clean and organized workstation to prevent contamination.
- Support customer service efforts by fulfilling orders accurately and professionally.
- Support the production kitchen in all capacities during down time from sushi production.
Inventory, Ordering & Cost Control
· Monitor inventory levels of fish, produce, dry goods, and packaging required for the sushi program.
- Place supply orders in coordination with the Kitchen Manager and Deli Director.
- Manage food costs through proper portioning, yield management, and waste reduction
- Contribute to pricing strategy and ensure products meet financial margin targets.
- Demonstrate financial competency in recipe costing and product profitability analysis.
Essential Requirements
- 3–5 years of sushi experience required.
- Proven experience working in upscale sushi restaurants.
- Valid Food Handler's License required.
- Strong knowledge of food safety and sanitation regulations.
- Ability to stand for long periods and lift up to 50 lbs.
- Ability to work in both hot and cold environments.
- Ability to handle common food allergens, including but not limited to wheat, fish, shellfish, soy, dairy, tree nuts, and peanuts.
- Proficient in basic computer skills and programs like excel.
