About the role
POSITION SUMMARY: Prepares food for consumption by elderly and/or disabled residents, ensuring that the highest quality measures are taken for taste and appearance.
Maintains orderliness in the kitchen, and oversees the food service line.
JOB FUNCTIONS: (This list may not include all of the duties assigned.)
1. Responsible for adherence to sanitation guidelines and assurance of state and local Food Safety and Sanitation Standards.
2. Follows basic recipes and/or product directions for preparing, seasoning, cooking, tasting, carving and serving soups, meats, vegetables, desserts and other foods for consumption in eating establishments.
3. Prepares foods by operating a variety of kitchen equipment to measure and mix ingredients, washing, peeling, cutting and shredding fruits and vegetables, and trimming and cutting meat, poultry or fish for culinary use.
4. Tastes products, reviews production sheets, estimates food requirements, checks production, and keeps records in order to accurately plan production requirements and requisitions supplies and equipment.
5. Prepares and cooks menu items to order in short preparation time.
6. Assists with purchasing, unloading and stocking products in proper storage area, labeling and dating items.
7. Cleans and sanitizes work stations and equipment.
8. Provides the highest quality of service to residents and guests at all times.
9. Oversees kitchen operation during service and gives direction to Cook II when necessary.
10. Responsible to give direction to kitchen and wait staff in absence of a manager or supervisor.
11. Performs other duties as assigned.
TYPICAL PHYSICAL DEMANDS:
Must be able to lift at least 30 pounds. Must be able to push and pull loaded carts weighing up to 300 pounds. Position requires prolonged standing and/or walking, and ability to climb stairs. Also requires bending, stooping and stretching.
PERFORMANCE REQUIREMENTS:
Knowledge, Skills and Abilities:
Knowledge of high volume, quality food preparation, basic food service, terminology. Ability to produce desired food items in quick, efficient and appetizing manner. Knowledge of various types of cooking and baking, including preparation of sauces, soups, meats, vegetables, pastries, etc. Knowledge of batch food prep and production. Knowledge of methods of preparations for special diets such as ground, pureed, chopped, etc. Ability to read, write, speak and understand English. Ability to read and interpret recipes. Ability to take direction and follow through. Ability to follow all Sodexo, McLean, and HAACP regulatory rules and procedures. Ability to follow regulatory guidelines.
EDUCATION: Minimum high school diploma. ServSafe Certified, renewed every 3 years.
EXPERIENCE: 5 years of experience with different types of cooking methods, cuisines and experience with therapeutic diets.
