SUMMARY
The Baker is accountable for the quality and consistency of all pastry products produced and served including the efficiency and consistency. The Baker works directly with the Sous Chef on the creation, development and implementation of new desserts and creative menu developments of all Casino Hotel restaurants.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Demonstrates hands on approach to all bakery products produced.
- Ensuring quality, presentation and consistency standards meet company standards.
- Assist with the development of standardized recipes for all menu items. Ensures that recipes are accurate and updated as needed.
- Decorating and displaying finished products.
- Ensures that all food products prepared meet the established specifications and standards.
- Ensures proper levels of bakery and pastry items are prepared based on forecasted needs and their prompt delivery to the designated outlet for guest consumption.
- Responsible for complete set up, cleanliness and organization of the Pastry Department and bakery areas at all kitchen locations.
- Maintains a professional appearance at all times.
- Seeks to maintain knowledge of industry trends in the world of pastry and baking.
- Bake fresh pastries, desserts and bread for all Food & Beverage venues.
- Measuring and combining ingredients and using mixers, blenders, heat sources, and other equipment to make baked goods, such as cookies, pies, breads, cakes, etc.
- Recommends measures to improve production and service methods, equipment performance,
- Responsible for fulfilling kitchen food inventories.
- Cleaning and restocking workstations and ensuring that all equipment is sanitized and prepared for the next shift.
- Understanding food safety practices.
- Familiarity with professional kitchen equipment, including mixers, blenders, and dough sheeters.
- Cooperate and communicate with fellow Team Members in all departments and always strive for mutual respect.
- Follows company safety and security policies and procedures. Reports accidents, injuries and unsafe conditions.
- Must be able to work both independently and dependently as a member of a team. • Perform related duties as assigned.
- Must comply, complete, and maintain all assigned online training programs before due dates.

EDUCATION AND/OR EXPERIENCE
(G7/S1-3 DOE)
- High school diploma or GED required;
- Two (2) years’ experience in Pastry & Bakery production;
- or an equivalent combination of experience, certification or training.
(G8/S1-3 DOE)
- Associates Degree in Culinary Arts/Pastry Arts or related field required;
- Five (5) years or more experience in food service, Certified Pastry Culinarian, Certified Working Pastry Chef, or Certified Executive Pastry Chef;
- or an equivalent combination of education, training, certification or experience.

- Bachelor’s degree in hospitality, Culinary Arts, or Business Management; six (6) years or more experience in Food & Beverage Management. Must have Certification in Pastry Culinarian, Working Pastry Chef, or Executive Pastry Chef.
SUPERVISORY RESPONSIBILITIES No supervisory responsibilities

LANGUAGE SKILLS Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Employee requires the ability to write routine reports and correspondence. Employee requires the ability to speak effectively before groups of customers or employees of the organization.
MATHEMATICAL SKILLS Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to perform these operations using units of American money and weight measurement, volume, and distance.
REASONING ABILITY Ability to apply commonsense, understanding to carry out instructions furnished in written, oral or diagram form. Ability to deal with problems involving several concrete variables. Must be able to communicate effectively in person, while on the phone, while using intercom/microphone, and in writing.
CERTIFICATES, LICENSE, AND REGISTRATIONS
- Must be able to submit supporting documents of education and training (High School Diploma, GED, Degree, and Certificates). if applicable.
- Must be able to pass a complete background investigation.
- Must be able to pass a drug/alcohol screening.
- Must be able to obtain Food Handlers certification within 90-days of employment.
- No driver’s license is required but preferred.

This job operates in a public work environment. This role routinely uses standard office equipment such as computers, phones, photocopiers, filing cabinets and fax machines. While performing the duties of the position, the employee is frequently exposed to moving mechanical parts and fumes, tobacco smoke, or airborne particles.
The employee is occasionally exposed to the risk of electrical shock. The noise level in the work environment is usually moderate. When on the casino floor, the noise level increases too loud. This position is held to a high degree of confidentiality and will adhere to P.L. 93-579522 (a) and the Policy and Procedures of the Shoshone-Bannock Casino Hotel.
