Food and Beverage Supervisor
POSITION SUMMARY:
The Food and Beverage Supervisor is responsible for all F&B operations and for delivering fun and escapism to every guest.
Shares responsibility for the oversight of all kitchen, banquet, Welcome Cabana and food outlets and functions. Maintains quality control, manages purchasing and inventory and ensures guest satisfaction.
DUTIES AND RESPONSIBILITIES:
- Oversee Breakfast, Welcome Cabana, kitchen, Restaurant/bar, pool/patio service, banquets and in-house prepared food items.
- Greet and welcome all guests in a pleasant and professional manner.
- Maintain all outlets according to health department standards.
- Responsible for placing orders in order to maintain proper inventory levels according to expected occupancy levels.
- Screen, interview, hire and coach food and beverage staff.
- Manage promotional drink specials and menu items.
- Coordinate guest entertainment and activities for the bar areas.
- Participate in MOD schedule.
- Provide ongoing training to all employees.
- Assist staff as needed and fill shifts if necessary.
- Responsible for upholding the standard operating procedures as set by Margaritaville to maintain consistency and brand management.
- Complete all customer follow-up calls on a timely basis.
- Handle all Food & Beverage inquiries and ensure timely follow-up on the same business day.
- Coordinate with all group meeting/banquet planners their specific group requirements with the services & facilities offered. This includes proposals, contracts, estimated and actual function statements. With banquet or conferences, the Chef/ Kitchen Manager is to be included in food related discussions.
- Attendance and participation at weekly F & B meeting.
- Assist with the development and maintenance of department training checklists and outlines.
- Supervision of weekly payroll input.
- Must have a complete knowledge of emergency and fire procedures.
- All other duties as directed by the F&B Director and General Manager.
- Assure bar inventory for functions, including opening and closing inventories, accurate bar summaries and cash deposits are prepared.
- Ensure the maintenance of bar control policies.
- Completion of monthly beverage inventory.
- Quality of meeting room set-up.
- Touch tables to ensure guest satisfaction and improve customer engagement.
- Ensure a professional attitude and proper business attire when on property, ready to meet or service a client at any time.
- Staff should have a professional attitude and properly meet company appearance and uniform standards.
- Responsible for staff training and development.
- Ensure all staff have proper certifications, for their roles.
- Work to ensure high employee retention.
- Assist in personal development and growth of department members.
- Participation towards overall hotel maintenance and cleanliness.
- Minimize the number of Workmen's Compensation claims.
- Be able to work all positions within the F&B department, i.e., bartender, breakfast server, restaurant server, expo.
- Maintain ServSafe training and alcohol certification.
- Report any deficiencies in equipment and facilities.
PREREQUISITES:
- Must be willing to work days, nights, holidays and weekends.
- Must be knowledgeable of the property and surrounding areas, for guest requests
- Friendly, outgoing personality and professional appearance required.
- Physical stamina and mobility including ability to reach, kneel and bend with ability to lift, push, and pull up to 50 pounds.
- Strong verbal communication skills required with an understanding and ability to work in a multi-cultural environment.
- Must be able to work under a high volume and handle stress in a positive way.
- Must be able to assist guests with complaints.
- Ability to work independently with little or no supervision.
