At Joseph’s Classic Market, our Commissary – Production Chef oversees the preparation of approximately 8,000 pounds of food per day, supplying all store locations with restaurant-quality meals. This is not a traditional restaurant kitchen—it is a fast-paced, structured production environment where efficiency, organization, and leadership are essential to maintaining the Joseph’s standard across multiple stores.

Routine Tasks:
- Production Oversight
- Oversee large-batch food preparation according to established recipes and portioning standards
- Facilitate packaging, labeling, and distribution of prepared foods to multiple store locations
- Monitor and maintain product quality, consistency, and freshness throughout production
- Execute recipes for hot and cold buffet setups and ensure proper plating and portion control
- Conduct regular line checks, including temperature logging, rotation and dating, and freshness inspections
- Plan menus and production schedules based on store demand and delivery timelines
- Inventory & Cost Control
- Maintain accurate inventory records; order and receive ingredients and supplies as needed
- Manage food waste and utilize leftovers in accordance with company guidelines
- Support cost control initiatives while maintaining product integrity
- Team Leadership & Development
- Supervise and coordinate the work of cooks and food prep staff to ensure efficiency and adherence to quality standards
- Create and manage weekly kitchen staff schedules
- Train team members on preparation techniques, equipment use, and sanitation procedures
- Conduct performance reviews, provide coaching, and foster a positive, productive kitchen culture
- Compliance & Standards
- Ensure compliance with all sanitation, food safety, and kitchen safety regulations in accordance with local, state, and federal guidelines
- Ensure all kitchen equipment is cleaned, maintained, and functioning properly
- Uphold Joseph’s Classic Market’s quality standards across all products leaving the commissary
- Collaborate with store chefs and leadership on menu planning, product updates, and operational feedback
Qualifications:
- Minimum of 2-3 years of experience in high-volume or large-batch production environments (commissary, food manufacturing, institutional kitchens, or similar) required
- Strong understanding of batch cooking techniques, food safety, and commercial kitchen operations
- Demonstrated ability to lead, train, and motivate a team in a fast-paced production setting
- Strong attention to detail with a focus on consistency and quality control
- Bilingual in English and Spanish required
- ServSafe or other food safety certification preferred
- A passion for serving people
Physical & Work Environment
This role is performed in a high-volume commissary kitchen responsible for large-scale daily production and does not involve direct customer-facing duties. The position requires extended periods of standing and walking, frequent interaction with team members, and the ability to lift products weighing up to 50 pounds. The Commissary – Production Chef works around commercial kitchen equipment, hot cooking surfaces, refrigerated storage areas, and food production stations. Schedule flexibility is required, including availability for nights, weekends, overnights, and holidays as production demands dictate. The typical workweek ranges from 50–55 hours, though actual hours may vary based on operational needs.
