The Monarch San Antonio – A Legacy of Service and Sophistication

The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. It is set to open in early 2026 and is inspired by the Monarch butterfly that migrates through the region each winter. The hotel will feature a full-service spa, a terrace pool, and five food and beverage concepts, including a rooftop restaurant and bar.

Position Overview

The Chef de Partie is responsible for managing a designated pastry section and delivering consistently high-quality desserts and baked goods in accordance with five-star luxury hotel standards. This role requires strong technical pastry skills, organization, teamwork, and strict adherence to quality, hygiene, and brand standards.

What You'll Do

Pastry Production

  • Prepare and execute desserts, pastries, breads, cakes, and plated desserts as directed.
  • Assist in production for restaurants, banquets, events, and in-room dining.
  • Follow standardized recipes, portion control, and plating guidelines.
  • Support chocolate, sugar, and bakery production as assigned.

Quality & Presentation

  • Maintain consistent quality, flavor, and visual presentation aligned with luxury hotel standards.
  • Ensure all products are prepared fresh and displayed attractively.
  • Perform daily quality checks of ingredients and finished products.

Hygiene, Safety & Standards

  • Comply with HACCP, food safety, and sanitation regulations at all times.
  • Maintain cleanliness and organization of workstations, equipment, and storage areas.
  • Follow proper food handling, labeling, and storage procedures.

Teamwork & Operation

  • Work closely with pastry team members to ensure smooth and efficient service.
  • Follow instructions from senior pastry chefs accurately and efficiently.
  • Support daily operations during service periods and special events.

Inventory & Cost Control

  • Assist with receiving, storing, and rotating pastry ingredients.
  • Minimize waste and report shortages or quality issues promptly.
  • Properly use and care for pastry tools and equipment.

What You'll Bring

Required Education & Experience

  • High School Diploma or equivalent required.
  • Minimum of 1–3 years of experience required in a professional kitchen environment.

Preferred Education & Experience

  • Certificate or diploma in Pastry Arts, Baking, or Culinary Arts preferred.
  • Luxury hotel pastry experience preferred.

Required Skills and Abilities

  • Basic knowledge of pastry techniques and baking fundamentals.
  • Strong attention to detail and consistency.
  • Ability to work under pressure in a high-volume environment.
  • Good time management and organizational skills.
  • Team-oriented with a positive attitude and willingness to learn.
  • Ability to stand for extended periods and work flexible schedules including weekends, holidays, and special events.

Licenses or Certificates

  • Food Handler Certification required.
